    i looked up how to make glaceed fruits and it looks pretty simple. i might actually try it.

    It is like a cake which in my country is called "keks".It's very popular on Christmas.Sometimes we put chopped nuts and almonds inside and a little bit of vodka or dark rum :))) .Eric,your cake looks delicious.

    Love fruitcake! I make my own using a Christmas flavoured recipe where I macerate the dried fruit in half Rum, half rectified spirit (95% alcohol content) and spices like cinnamon, ginger, cloves and some allspice or nutmeg. It's delicious but I wouldn't recommend driving after eating a slice :)

    why my cake sinks down a little bit..only the cake from middle.. not the fruit

    That looks so good! I wonder, can you omit some of the fruit and replace with say chocolate chips and/or nuts?

    Another one to add to the list, going to have another go at the pain au chocolat, have become very popular in our house, even though the recipe makes 12 , i put some in the freezer for later, but you can hear them calling to you.

      yes, don't forget to toss them in a bit of flour to avoid sinking!

      also you might like to soak them in something like orange juice to plump them up

    Fruit cake gets a bad rap, especially on american TV programmes, but I like it especially around this time of year.
