How to Cook the Best Boston Clam Chowder recipe just like Pike Place Chowder

  • A video and recipe on how to make the Best Boston Clam Chowder recipe like they make at Pike Place Chowder in Seattle
    INGREDIENTS:
    - 3 thick slices bacon, chopped
    - 1/2 cups white onion or shallots, 1/4 inch dice
    - 1/2 cup celery, 1/4 inch dice
    - Unsalted butter
    - White pepper
    - 1 1/4 cups half and half, divided
    - 1 cup cream
    - 2 tsp clam base
    - 1/2 cup dry sherry
    - 1 - 8 oz bottle clam juice
    - 2 - 6 oz cans minced clams
    - 1 - can baby clams
    - 1/2 tsp fresh thyme, chopped
    - 1 tsp granulated garlic
    - 1 tsp herbes de provence or dried basil
    - About 1 lb Yukon Gold potatoes
    - 3 tbsp corn starch
    - Chopped chives
    - Bread bowl

    After searching two stores for it, I found out they discontinued Better than Bouillon Clam Base. Once I find a clam base near me I'll give it a try.

      I contacted Better Bouillon and asked them is it necessary to have the Ham Base and not the Clam? Service rep has said they’ve received numerous calls on the clam base !

      Minors puts out a clam base. It is very similar to " Better Than" clam base.

    Made this recipe last night and it was the best clam chowder we've ever had. Couldn't find the clam base either so used chicken base and roasted garlic base. Awesome!!

    I like most of this recipe, but I don't use spices in mine. Especially thyme. Corn starch? Better than flour? That's questionable, gives the chowder a more translucent look and slimy texture. Flour has better flavor and keeps the milky appearance for the chowder. I really like the blending part. Keeps the focus on the clams. Powdered garlic instead of fresh is a very bold move. Garlic, like onions, is great in all its forms, fresh, dried, sauteed, or just boiled, or fried. Great job but why spill on purpose? Messing with my OCD!

    A lot of those specialty ingredients we don't have locally here in Florida but they also didn't have candybars nor chips nor anything interesting like gum etc...ha-ha

    I have to agree that the best chowders this side of the Rockies are at Pike Place Chowders. They are otherworldly good. Thanks for sharing the thoughtful recipe, process and tips.     It turns out that Better than Bouillon discontinued their clam base. Oh no! Any other suggestions? I thought that would be the secret that would make my clam chowder over the top like my late uncle's who was a fisherman in Maine! We spent many summers clamming at low tide then he'd work his magic with lobsters and clam chowder. I was too young to know I should have been paying attention!

    Yes..yes..yes..when I look at recipes for Boston clam chowder I always look for bacon & cream.. otherwise to me having my family from Boston it's not Boston clam chowder...it's also the reason I can't spell..because they can't talk right either...must be the accent

    Also ... if you want your chowder thicker... use more potatoes! Use flowery potatoes rather than waxy ones.

    It's actually called "New England Clam Chowder" - not Boston Clam Chowder. But it still looks very good. :)

    howders, lower New England chowder (including those with tomatoes) and Rhode Island chowder. You can pretty much get them all in Boston. Your recipe when I tried it was complex and delicious but probably a bit expensive for a New Englander. I doubt many in Boston would object much to this recipe save the spice combination. But good stuff nonetheless. 👍

      Apparently chefs are using the same brand ‘Better Than Bouillon’ but it’s called Lobster Base.

      That’s where we are from (Pismo). No more clams…but we like visiting there several times a year. Every restaurant does Clam Chowder…most are pretty yucky!

    Honeys, you know better than that...serve it in a pumkin or Butternut squash (the sweet kind) and garnish with sweet potatos or yam....avoid the carbs...diabetics...but yes, it works with bread too...disney brats. You may also use a Green Pepper or Poblano Pepper to hold the soup.

    manhattan "chowder" is not chowder by definition. Chowder has a milk or cream base, so the terrible new york version is more like a seafood tomato soup.

    I made this yesterday for the first time after having the real thing (PP Chowder) about three weeks ago. This is very close to the original and isn't hard to make.
    BTW the better than bouillon clam base has been discontinued.... I found a diefferent brand on Amazon.

      Took Mom to Seattle with me so she was a great tester for some carefully reheated (sous vide) leftovers. She agreed... this is the real deal. Dad didn't go but ate all of his and loved it. This is a keeper.

      I don't have clam base, but I'd say you could probably use it in a seafood risotto, ramen broth, or miso.

    They must have stoped making the clam base any suggestions would be appreciated, knorr makes one but it's very expensive.

      I recommend everyone heat and taste a tablespoon of clam juice from a jar before using it! That will be the last time you use it I swear. Most people use it but have never tasted it. Taste it. Do you want award winning taste? Make fresh FISH stock. Yes fish stock. It’s a main ingredient of ALL good clam chowders.     Hi there, I will have to try your recipe some time, it is very close to the one I use. If you are looking for a place to eat clam chowder I would suggest "The Chowder Bowl" in Newport Oregon. It has changed hands since I have been there but we used to go there and have all the clam chowder and salad we wanted. If they still make it the way they used to you could almost stand your spoon up in it.

      Overfishing in certain parts of the west coast decimated local populations before conservation could begin (thanks gold rush).
      Other populations msy have since filled the void, but whats lost cant be returned - not really.

    If you want good clam chowder, don't use canned clams. Buy the clams and boil them and chop them up for use. Use the water from boiling the clams in the chowder also. I don't know why you did away with the bacon grease. You should cook your potatoes, celery and onions in it on low. Have to watch you don't burn them. You don't want any dark burn spots. Sorry, but I want New England clam chowder. That is not what this is.

    Interesting concept: Boston Clam Chowder. I live on the coast of Maine not far from Boston an I consider myself a chowder analyst - fish chowders included. In my experience there are upper New England type c
