Oh and just as a slight feedback you may not want to use yellow in your slides. The bright color like that is very very hard to see on the white background. In some of the slides you use yellow lines to show the connections between the UE and the LTE core and the 5G core, but the lines are very difficult to see cause of the brightness! I work in the field of Telecom as well, but still hard to keep track of the emerging tech AND the different specifications and requirements etc.. My question to you is Duetsche Telekom is a Telecom provider right? SO why do they have input into the design of 5G? shouldn't the design and requirements of the 5G elements and architecture be decided by the 3GPP?
Any company that is interested in finding out first hand what's going on in standards join the 3GPP meetings. These include operators, vendors, researchers, analyst firms, etc. To attend 3GPP meetings a company needs to be a member of one of the 3GPP partner organisations. Duetsche Telekom is member of ETSI.

All 5G default with 5GC is Option 2. The specs won't say Option 2. When it's talking about option 3, it would say "in case of EN-DC". 38.300 is probably the best place to start unless you are looking at something specific.
