I just bought a digital pressure canner. Woo hoo! For long cooks it’s so nice to have a canner I can set and forget! I also have my old canner that I’ll use. Thank you for your great tutorial! And yes, home canned tuna is so much better than store bought! And the price in the store for those tiny cans! Unreal! Cat food…. Hahahah😂 I’m using your screw band trick to keep the jar tops clean!
Hello. Thank you for the very informative video! We just caught albacore in half moon bay, CA and have been canning the last few days. Question, where do you buy your half pint wide mouth jars? I pay almost $2.00 each at Ace hardware. I see some cheaper on websites that seem sketchy.. thanks!
We have a local store called Winco that we purchased from. It's an employee-owned grocery store, and they are the least expensive I've found. It's been a few years since I've had to purchase jars as I bought about 120 of them a few years back.
I didn't even think about eating one at the time! We've had them on the shelf for 4 years - I would be comfortable keeping them for 5, but not longer. They were still as good at 4 years as they were at 1 year on the shelf.

Hello, I do not have one of these devices, if I put jars of fish in a pot of water, should it boil in water for a few minutes? Do I need to add oil too?
No. With pressure canning, you are not boiling your water. Pressure canning creates pressurized steam which pushes the temperature to 240 degrees Fahrenheit or higher. That will destroy the bacterial spores naturally present in these foods.

Mark and Merry are great people. I fish with their charter outfit All Rivers when I go out for Tuna and we almost always do well.
I get tooooo seasick - especially going out the bar - so I just buy my tuna from Mark these days. LOL.

I enjoyed the video. But wouldn't using the funnel be easier then using spare bands to help keep it cleaner?
That's a great idea for the top of your jars, the rings on while packing.

I have heard about that, but prefer canning them in their own oils. If you try it, let me know what you think!

You're absolutely correct! It's not necessary when pressure canning. I guess I'm just a creature of habit! 😂

You MUST pressure can tuna; simply boiling jars of tuna in water is not a safe canning method. Sorry!
