The summer is hot and humid. September is really pleasant. The winter is freezing. You will never get bored in Chicago [museums, food, nightlife, beaches, shopping, etc.].
California Santa Maria tri-tip can be very tricky. If done well, it rocks; otherwise it’s terrible. It’s such a cheap piece of meat that during the summer (well, here in California) you can find them “buy one, get one free”.

Eastern North Carolina style pulled pork with a vinegar-based sauce and cole slaw piled on top is my favorite, served on hamburger-style buns.. Not only is it delicious, but it's probably as far from the Texas beef brisket you've already tried that one can get and so should be your next choice.

Instead of using barbecue sauce our salmon is brined with herbs, spices, salt, and sugar. After 8 to 12 hours of brining the salmon is rinsed, air dried, and barbecued over very low heat for several hours until the internal temperature of the salmon reaches 165°F (74°C).

You can get NYC pizza in Chicago, Chicago pizza is Las Vegas, Los Angeles pizza in NYC. Etcetera. If you go to a big city you'll find every style of food. Chefs take their talents to new cities seeking opportunity. Local franchises spread across the country. You don't have to go to one specific city to get that city's food.
We used to have a restaurant here in Wichita that specialized in Hawaiin BBQ. It was a special go to place for me. The owner and chef was from Samoa and had lived in Hawaii for many years. But the business could not survive the COVID pandemic and closed. It is very much missed.
We have Carolina BBQ (North and South), Memphis BBQ, Southwest BBQ, pretty much every State even mine (Virginia). Personally, I am a huge fan of Baltimore BBQ from Maryland. They like their spice.
There are 50 states in America, but way more different types of Bar-B-Q all across the USA. With styles borrowed by Tourist traveling and taking ideas back home, to chefs moving from one area of the country to another, to just folks coming up with their own ideas about what makes a good Bar-B-Q. I've tried so many different styles using both pork and beef that I can't even remember them all...I have yet to try the mutton but I would welcome the chance. Now, I have had Chicken, Turkey and some wild game Bar-B-Q such as Raccoon. The one thing I can say is that I've loved them all...maybe some better than others, but then that would be the same with everyone. I live in the southern part of the state of Georgia and yes, we love our Bar-B-Q down here as well and yes, you can find it cooked in a pit as well as a smoker. For some folks, there is only one way to have Bar-B-Q, but for me, I'm still working on it!!!

There are actually a variety of paprikas and they are a European specialty, adopted in America. "Regular" paprika is best imported from Hungary and there is, indeed, a "hot" version. But Spain is known for smoked paprika (ahumado) as well as the "sweet" kind. This can be used to give foods a smokey flavor without using that nasty fake "liquid smoke".
Lamb is a classified as a sheep less than a year old. Mutton has to be over one year old. Mutton is a bit more gamey tasting but not much. The meat also has bits of hard bone. Usually landmines of hard cartilage. Lamb is very smooth and not gamey.

I've lived in Virginia all my life. I've never heard of a Peanut sauce for BBQ before, but there could be someone out there somewhere who uses it. I think that it was more of a mustard sauce that you saw instead of a peanut butter sauce.😊
I haven’t had a lot of bbq and don’t like a lot of them, I know that’s weird because most people seem to love bbq. I also don’t like traditional bbq sauce lol, but think I would like vinegar based or mustard based better. Maybe it is just because of where I live, bbq is not that available here and maybe not done right. I do love the sides. I ate at Terry Black's twice in the last year and both times the brisket was dry and disappointing. I'm never trying it again if I'm paying the bill because 50 bucks for dry brisket eaten on a paper plate isn't my idea of good value.
I have had Kansas City barbecue at Arthur Bryant’s. however I went a luau in Hawaii. The pig was done in a pit wrapped in banana leaves. I was all good. However, I like St. Louis barbecue.

Yes, there is/was a place near Marble Hill in north Georgia (we were staying in Dahlonega) with terrific BBQ. Last time I was in Atlanta we enjoyed Twin Smokers BBQ, right downtown.

(Rib tips)…..because no one goes to south side our culture didn’t permeate. So it’s forgotten and has stayed in only some neighborhoods. SWEET BABY RAYS bbq sauce which is really popular started in Chicago suburbs. To be honest our good bbq is ethnic bbs (Arabs/polish, Latino/asian etc). Mexicans do whole goat bbq. Arabs do whole lamb/mutton/ and many places do sausage (polish/lithuanian).

Native Texan here ..... As far as I'm concerned, the only legit barbecue styles are Texas (of course), Kansas City, Memphis, and the Carolinas. Okay, I've said it! Now, who wants to fight about it?
The only thing I will say is that Hawaii is not a BBQ destination. I was stationed there for 3 yrs. I did enjoy the American style Korean BBQ. But if you go there for the Hawaiian pig in the hole "Luau" they are covered in leaves while cooking. There is absolutely no smoke flavor or salt. This is not BBQ. It has no flavor.
To describe how good Texas BBQ is just say 'Larapin Good'. Which also applies to other styles of BBQ but Texas is my fave. Peanut butter gives a more 'earthy' taste. I have never used it in BBQ but I do use it in chili sometimes for the same reason. You would be surprised.
Texas barbecue will get you the best meat. Other styles tend to be more sauce dependent. Carolina mustard sauce hits the goldielocks zone between sweet and vinegary. Alabama white sauce is an abomination.
This list omitted a few places, Oklahoma, Georgia. St. Louis, but had Chicago and California... literally two places that nobody goes to for great bbq. Not saying they don't have some good places to go there, but its not to the level as these other places.

I love beef satay with peanut sauce. The Thai people were the first to introduce me to the combo. Now I get that at every time I go eat Thai food.

To describe how good Texas BBQ is just say 'Larapin Good'. Which also applies to other styles of BBQ but Texas is my fave. Peanut butter gives a more 'earthy' taste. I have never used it in BBQ but I do use it in chili sometimes for the same reason. You would be surprised.

Texas barbecue will get you the best meat. Other styles tend to be more sauce dependent. Carolina mustard sauce hits the goldielocks zone between sweet and vinegary. Alabama white sauce is an abomination.
I've eaten barbecue all over the states... Oklahoma has some really good barbecue I don't know why it never makes the list....😢
This list omitted a few places, Oklahoma, Georgia. St. Louis, but had Chicago and California... literally two places that nobody goes to for great bbq. Not saying they don't have some good places to go there, but its not to the level as these other places.
