Today, I'm excited to share with you a special family recipe for Spanakopita that has been passed down to me by my great-great aunt from a small village called Mesini in Greece. This traditional Greek dish is made with spinach and feta cheese mixed together and layered in homemade crunchy phyllo pastry. The best part is that it's so easy to make and requires no pre-cooking of the spinach. This appetizer is perfect for any occasion, and it's sure to impress your guests. So, let's get started and honor my great-great aunt's legacy with this delicious and authentic recipe!
This is possibly the best Spanakopeta video I've seen, with squeezing the raw spinach and making your own filo, neither of which I have seen that in any other video. I'm looking forward to making this using your recipe and methods.
I notice you only had one layer of filo on top and bottom . Some recipes say 2 to 4 layers . Maybe your filo pastry is thicker than theirs . It looks amazing anyway !
