Yes you bet as many spanakopita variations as there are Ya-Yas. I like to add some lemon zest to the mix and some beaten eggs, also washed on the pastry for that golden brown look. Herbs in season but almost always oregano. My neighbour makes it totally differently, it's just as good, I would say even better because she always brings me one.
What number phyllo-#7- egg wash on top. Sprinkle water on top so the phyllo doesn’t fly in the oven. When using #7 you need more phyllo on top & bottom. Do you use egg to mix with the cheese.

No egg! You can use either #4 or #7. Thicker is better for this.
My Yiayia called this "Village People" phyllo. I still laugh when I think about it.
