Any white meat freshwater fish you can leave the scale on when you cook them. The scales will pop up when done and you can peel the whole skin off at once. Putting seasoning in that pocket will negate that fishy taste

Yeah I hear ya, but I just can't bring myself to eat fish with scales haha
