    Today we're making the vintage cocktail, Bijou! Definitely one to try if you haven't already! "Bijou" is French for "jewel," and three gemstones are represented in this drink: gin being a diamond, Green Chartreuse an emerald, and sweet vermouth a ruby. Dating back to 1900, the original recipe was all equal parts - a ratio I've found a bit heavy on the Chartreuse. However, the recipe also suggests an olive for a garnish. Which is something I haven't tried yet. So in today's video, I'll make one with the salty olive to see how that offsets the sweeter Chartreuse, but also show you the ratios I've come to love in this classic! Cheers!

      In NYC at least, limited sampling shows Astor Wines out of 750ml green but has 375ml ($32). Nearby Warehouse Wines has green but only in 50ml 😭 & Union Sq Wines has 750ml green in stock ($65); uptown, 750ml green also in stock at Sherry-Lehmann ($64).

      No issues finding green chartreuse here (New England). Also, when I make a cocktail with chartreuse in it for people, I remind them NOT to try to substitute yellow - it’s totally different and a lot of people don’t realize that at first.
      Btw is that ring on Oz new or did I miss the engagement??

      I’ve seen a couple bottles of yellow in Austin but there’s no green anywhere and even finding the yellow is inconsistent.

    My all-time favorite! I have a policy of “no Bijous if there’s work tomorrow” because two more Bijous have a tendency to sneak in behind my Bijou.

    Some people were just made to be on camera. Anders is one of these people. The perfect combination of personality, confidence, humor and expertise. I've heard that being a content creator is harder than it looks but Anders makes it look easy. Just a guy in his element making cocktails for his friends and telling us all about them as he does so. I don't really drink but that doesn't make the videos any less enjoyable. It's fun to learn about the science and art of cocktails and mixology and Anders is a good, and cool, teacher.

    Chartreuse is my favourite liqueur and being in Montreal Canada, I haven't noticed a shortage here except of course for Yellow Chartreuse which when I inquired at the liquor store said that they only receive 1 shipment if that per year. I will keep my eyes out for a bottle of the yellow. Thanks so much for sharing your love for Chartreuse.

    At the end of the previous school year a mom gave me a $100 bill as a thank you (totally blew me away as that is not normal), and I went to Total Wine specifically to pick up a bottle of Green Chartreuse. I've used it so sparingly that I still have roughly 3/4 of the bottle left. My favorite drink I've made with it so far is the tikified Chartreuse Swizzle that also uses pineapple juice, lime juice, and falernum. Quite a refreshing summer drink!

    Like you, I double the gin, but I don't use Plymouth; I use Beefeaters. I use more green chartreuse than that and Carpano Antica as a rule. I haven't tried it with Cocchi Torino.

    Hi Anders. Long time viewer, first time commenter. I learned the Bijou years ago from a book that mixed it 1.5 gin, .5 chartreuse, .5 vermouth with orange bitters and it’s always been a fave of mine. Thanks for your inspiring work.

    How funny, and timely... I made a bijou for the first time last night! I really enjoyed it, and went to mix another; but I wasn't paying attention, and grabbed the dry vermouth from the fridge instead of the sweet. Lo and behold, I found I really liked it with the dry, like one of those antique variations on the martini. It was really good, both ways!

      @@AndersErickson it would probably be Helidor. My spec is 1 oz gin, 1 oz Dubonnet Rouge, and 0.5 oz Yellow Chartreuse. I know it’s not traditional, but it is very juicy and you can easily drink one too many 😃. Maybe even Lillet Rouge would work nicely here.

    Thanks to your videos, my wife and I tried Plymouth Gin (and more cocktails, in general). It is now are favorite. We tried Old Tom and a moutnain more modern gins but we keep coming back to Plymouth Gin. We love it!

    For years my favorite has been 'the last word' so there's allways chartreuse + a back-up-bottle in the house. (No shortage in Amsterdam ;)

    The first time I made this one I've missed read the recipe and made it with yellow Chartreuse, and I liked it!
    I can't say which one is better, my mistake or the original, they are both good. I still keep making my version when guests ask for a sweet & strong gin cocktail

    Me too happen to have a half a bottle of Green Chartreuse that’s not very frequently come at use. You gave me one more reason, the Anders version, since I’m also carefully with this liquid. Translating your receipts, to what ever measure, you have proportion 5-3-1. I go with that.

    I’m almost done watching the entire back catalog of your videos Anders! I made a Bijou when I first started my home bartending journey, but I can’t recall the specs I used (it was probably the equal parts version). I happen to still have 3/4 of a bottle of Green Chartreuse in my bar, so I made both the original and your version tonight. I used the same vermouth, but used Beefeater London Dry instead of Plymouth.
    I definitely prefer your ratios. The original was quite sweet and a little syrupy. I still had so much of the Green Chartreuse show up in the modified specs, but it felt more balanced and, for me, had a more pleasant mouthfeel. It also preserves so much of that precious green liquid gold.
    I also took the opportunity to take small sips before and after expressing the lemon peel to get a better sense for how important those oils are to the experience (Narrator: he forgot to express the lemon peel.)
    I believe that the creators of these cocktails would appreciate others taking inspiration from them and not just copying them. As bartenders we have so much opportunity to explore, create, and play with new ideas and riffs on classics. Cheers! 😊

    Another great video Andres!! I tried your version of the Bijou against a white Negroni- only substituting the Suze with green Chartreuse - I’ll call it the Whiter Negroni- 1.5 London dry gin - 1 - dry vermouth and .5 green chartreuse. Lemon peel for both. That whiter Negroni being less sweet a winner winner.

    Dunno where I picked it up but I usually go for a 1.5/.5/.5 ratio. Also hadn't heard of hitting it with lemon oil but definitely worth a try. Thanks, Anders.

    So glad you did this one! Early on when I started making cocktails I tried a Bijou with equal parts (which I believe Dave Arnold includes in one of his books?) and wrote it off as too sweet and not well balanced. But I did like the general idea of it.
    If I had had more experience at the time I probably would have tinkered with the ratios, but now I have this video prompting me to circle back and do it!

    I've always made it with all equal parts and a cherry, but I use a stronger flavor Gin that stands up against the Chartreuse (Aviation works well as it has strong orange and anise flavors that get along with the rest)

    I HAVE been sitting on a half bottle of green chartreuse since I had a bad experience drinking too many Last Words (never do that again...aish). I shall try this one, in moderation, of course.
    And I've been on the Dr. Squatch train for over a year. Great stuff. Just put on the pine tar deodorant for the first time today.

    Very enjoyable cocktail. I’ve used David Lebovitz’s proportions (based in turn on DeGroff’s revision but with “a touch more vermouth”): 1.5 gin, .75 green Chartreuse, 1 oz sweet vermouth, 2 dashes orange bitters (alt: absinthe rinse) + lemon twist garnish. It’s very good, but I’ll give your “modern” version a go as well. (Lebovitz also notes that “pedants may quibble that the cocktail should actually be called the Bijoux, plural” - he has a point!)

    I got around to making this one today. While I haven't tried the original version yet, I found yours to be very pleasant . On my second one now :) I have to say, Green Chartreuse has been easy to get here in Utah (which is surprising) but we don't have Cocchi Vermouth di Torino here. I ended up getting some out of state, and so glad I did. Now I know why you include it in so many drinks

    I am not a gin person but I would definitely try this drink! Maybe I'll check my local Binny's to see if they have any chartreuse. I wish I could come to your bar and try it the next time I'm in Chicago! Love these videos.

    Here in Latvia, I don 't think they stock Chartreuse anywhere (except maybe in warehouses where only bars can buy it, ot the bars have to import it themselves. Luckily, I was just in Paris and brought a bottle back home - finding it in PAris of all places was not easy though. I hit up 5 different liquor stores before I found some. Same goes for Benedictine. Good news is now I have stock for some while. Nice drink - and I will actually be able to try it now that I finally have acquired some Chartreuse.

    I've wanted to get some green chartreuse for a while now (never owned a bottle), but here in Washington state, it's $75 a bottle! I'll pick some up eventually and will definitely need to try your recipe. Sounds delicious.

    Hey, Anders! Great video as always! I'm just starting to get into the cocktail world, and your videos have been a great introduction. A question for you if you see this (I don't know if this warrants a full video suggestion or not): as someone who is just starting to dive into the vast cocktail world, where would you recommend I start? I have noticed I am drawn to sweeter drinks, but I haven't really developed a sense of what I like and do not like yet; what are some drinks I can use to orient myself to see what I do and do not like?

    Green Chartreuse easy to fin in NYC suburbs; I prefer the equal parts, with London Dry and a cherry, version.

    So I tried this with the original version and indeed it was too sweet for my taste. However I was intrigued by the olive aspect 🤔 so I not only garnished with the olive but I did a bar spoon of the brine in the cocktail. Thinking it may cut the sweetness and it was actually a pleasant balance 👏🏼

    Thanks for another gin cocktail. I would probably go light on the chartreuse. I prefer less sweet cocktails and enjoy the flavor of gin. Thus, my go to cocktail of a gin martini. Cheers.

    Anders this is a huge favourite!! I have plenty of Green Chartreuse and I am thrilled to see your version of a Bijou!! I honestly will enjoy both methods of preparation!! This has stayed one of my favourite cocktails for many years. I can't use an olive in the Bijou however!! An olive just can't be in my Bijou!! How lovely to be able to try your version!! I do tend to go for dry cocktails and less sweet, and I do love Plymouth Gin, so I am all ready to go now and make your version!! It is a very attractive cocktail in a beautiful glass. Exciting!!       @@AndersErickson Anders I have had time to try both versions of the lovely Bijou and I definitely prefer your tweaked version. Having less Green Chartreuse makes the Bijou less sweet and I much prefer this version!! I could helping drink both versions but I am definitely choosing the considerably less sweet version. Huge improvement!! I was thrilled to experience the différence!! Thanks Anders!! This improved a cocktail that I have long loved!! Cheers!! Have a terrific week Anders and Ans!!

    I've never had Chartreuse, I use Dolin Genepy in cocktails that call for it, and they usually end up tasting good, so I've kept going with it

      Chartreuse contains some genepi plant, but also a lot of other herbs and flowers. It's a bit more complex and often sweeter than genepi. You might loose some of the herbal notes, but I'll definitely try, at least to piss of my friends who live where both Genepi and Chartreuse are made ^^

      Heard Dolin Genepy is a great cheaper alternative when Green Chartreuse is hard to come by or your pockets are light. I gotta try it! Also recommended Amaro Meletti as a great alternative if you can’t find Amaro Nonino!

    I found a recipe that calls for 2 ounces of gin and 3/4oz of both Grand Marnier and sweet vermouth. It's a very similar ABV to the original, slightly stronger even. Might help those who can't find green chartreuse and those who don't care for orange bitters, like me. If you have a glass that can't fit all that, reducing the gin to 1.5oz works fine too.
