Annatto is why American style "Cheddar." cheese is orange. What a great person. She reminds me of Bella, one of three owners and head chef of The Whole Earth Restaurant at UCSC where I had my first actual cooking job. She taught me lots including the proper use of the Chinese cleaver for mass production as well as how to properly tune a gentle simmer on a huge pot of soup. Every day I had to have a vegan, dairy and meat soup available at all times. The vegan chili as well. And the baked Tofu of course. Brown rice please.
Jamaican peaches are new to me- never saw them growing up and first ate peaches as an adult in the U.S! It would be nice to get feedback from the natives who are accustomed to the traditional cuisine. I'm curious to hear what they make of this style of cooking. As a veggie lover, I would be happy to try everything that she cooks!👍

The best cooking job that I ever had was at Gabriella Cafe in Santa Cruz California. We kept a Huge sampling of the local farmers market on shelves in the back, plus refrigerators for the more delicate stuff. We had a very limited set menu and every day I got to create two unique daily salads and two appetizers. And sheet pan after sheet pan of focaccia bread.
Can you please ask her how to use rose? An old Iranian coworker gave me the best smelling rose bush I've ever seen but I have no good recipes for it. I soaked the leaves in water inside the fridge for a few weeks one time and roomates loved it but your last video made me want to know more rose recipes.
@@Krogdalo I want to know how she makes the rose infused juices though. I would absolutely make some homemade rose + homegrown fruit juices if I knew how. I could turn them into popsicles and spoil the neighborhood kids with something unique which I kinda vybe with.
@@ziggybender9125 i thibk in the previous video it was mentioned that although traditionally rose petals would be used, she used roses essence in her drinks. A lot of the time though rose petals are crushed and added to drinks, can be a bit odd if you don’t like chewing on softened petals (they’re dried first). Rose is one of my favourite ingredients, and while I use rose petals occasionally, I like to use rose water or syrup. Aysenur Altan (a Turkish TH-camr) has some really good recipes using rose, including rose syrup and jam I believe. Sorry for the long reply 😅
