Kanʌstóhale, Oneida Boiled Corn Bread

  • In this video, we show you how we make Kanʌstóhale, a traditional Oneida boiled bread made from corn flour and beans. Here is the recipe:
    Ingredients:
    1 cup dried beans
    5 cups of kanʌstohale flour
    Directions:
    Soak the beans overnight in plenty of water. Rinse them off before cooking.
    Cook the beans in a pot of plenty of water.
    As the beans are cooking, fill a kettle about 3/4 full and put on high heat.
    Pour the warm/hot beans into the kanʌstohale flour and mix thoroughly.
    Pour 3 cups of boiling water into the mix and stir. Pour in more boiling water slowly while stirring. If your dough is still powdery, add a little more water. If your dough gets too runny, add more flour. The texture of the dough should be like playdough.
    Turn down the heat for the kettle to a slow rolling boil.
    Form the dough into small round loaves, and lower into the water.
    Boil on a rolling boil for 30 minutes, stirring occasionally.
    Remove the kanʌstohale from the boiling water and serve.
    Ohe∙láku, (among the cornstalks), a co-operative of Oneida families growing corn together, is partnering with Tetwatunhatenyehse (we are changing our lives), a group dedicated to re-establishing traditional cultural teachings of rites of passage to help prepare our young ukwehuwe men and women for their transition into adulthood. This video, and future videos will help Ukwakwa, Ohe∙láku, and Tetwatunhatenyehse share what we have learned about taking care of our food relatives. A special thank you to Native American Agriculture Fund and Oneida Falling Leaves 4H program for providing funding and support for the Ohe∙láku and Tetwatunhatenyehse youth agriculture project that teaches youth about traditional farming practices.

    Thank you for this video! I tried making this and my loaves fell apart; now I know it's because my beans were cold. I thought I was clever in pre-cooking them the previous night.

    Greetings from a Euro living on Kalapuya land in the Pacific Northwest. As we approach what is known as "Thanksgiving", as a descendant of foreigners to this place, I wish to respect my hosts and their land and to do what I can to make right the wrongs done to my them. I hope my attempt at making this recipe will be a good reminder of this aspiration and won't be perceived as cultural appropriation.

      I love hearing about people eating more of our foods on a regular basis! I haven't made leaf bread before, but would love to learn how. Maybe I should film the first time trying it and go for a comedy clip lol

      @@Ukwakhwa I've never made it before either! I think with maple sugar and a bunch of dried berries it would be an awesome snack while out in the bush.
      My partner is Chinese and his aunty makes something called Doung which is super similar to leaf bread. They make it with rice and stuff it with pork, salted duck egg, beans and other goodies then wrap it with banana leaves and steam it. It makes me imagine all the cool possibilities there are for leaf bread.

      @@erinhayward921 did you see our video on maple berry turtle cornbread? The berries were fresh, not dried, but I'm sure dried berries would be amazing as well. It was also made by boiling, not wrapped in anything. Leaf bread is on my to-do list for sure!
