Samoan/Polynesian/Melanesian/Micronesian food. There’s Vegetable Bin (Song’s Store) in Seattle on MLK. Lilly’s Bakery & Deli in Kent. In Valley Harvest Market there’s a small Samoan restaurant.

Cajuns are white and Creoles are Black islanders who were brought here sadly by slavery. I am a Cajun. I am proud to be a Cajun and I live in Louisiane. I have never met a Black Cajun and black Creoles normally do not mix with with each other. Creoles normally like Creoles and Cajuns like Cajuns. We are friends, but we dont normally like to mate with each other.

James Hemings (Jefferson's slave/chef) is the actual architect of American Mac & Cheese. His successor & brother Peter created "A Pie Called Macaroni" which is the basis of the homestyle baked macaroni we have today. Look up his sister Sally as well for an interesting history lesson.

You're trying to claim a cuisine
your ancestors didn't create solely by
themselves or even most of it. Southern food is
a multiracial cuisine with influences from
Whites, Native Americans and blacks. Soul food
is a made up word from the civili rights era
1960's during black empowerment era to claim
the multicultural southern food as a
monocultural cuisine for black people living
outside of the south (since no one in the north
was cooking that except for blacks who
originate from the south). It's a false word
designed to take all the credit for a cuisine they
didn't create most of. Southern food is made up
of three origins, not one or mostly one.

I was waiting to see the reaction for the sweet potato pie. 🤷🏽‍♀️ That’s a soul food must! The strawberry/chocolate crumble looked “aight” but that was not soul food. Y’all needed: pound cake, sock it to me cake, sweet potato pie, coconut cake, Buttermilk pie, a real red velvet cake, banana pudding, pineapple upside down cake, mud cake, lane cake, chess pie, vinegar pie and carrot cake. Then there’s BBQ aka cookout soul food, potato salad throw down. I’ve been a fan since 2012, hoping you expand the soul food reach, there’s a lot more for you to try.

Being from New Iberia Louisiana the Heart of Cajun Country and the original and ONLY home of Tabasco Sauce, I can tell you right now there is a distinct difference between Cajun food and Creole Food from Louisiana. If you're from New Orleans you're cooking/eating Creole Food NOT Cajun Food. Cajun Food is from the Lafayette/New Iberia (Southwest) area of Louisiana. The product he sold in Althas are authentic from cities like Breaux Bridge so they get an "A" for that aspect. The "raw" products like the gator and catfish, etc...how they're prepared and seasoned are similar between Cajun and Creole (though Cajun tends to be hot versus Creole being spicy) but the difference comes when you cook the Gumbo and other "roux" based dishes. Creole tends to be "heavy or darker" roux base and a bit "thicker" in consistency with file' applied after the cooking where as Cajun tends to be a "lighter" soupier based with file' cooked during and more spice. The taste is obvious if you ever visit Louisiana and travel to both areas to compare.

Wrong, it depends on the person when it comes to cooking and cajun country was made up in the late 70's early 80's most of it were Creole Parrishes check the records Tabasco sauce actually comes from Tabasco, Mexico. I could go on.

You make it quite clear that Cajun are not Acadian, something I have suspected for a long time.

Poche’s!!! Every time my mom and I go to her hometown Cecilia Louisiana which is the neighboring town of Breaux Bridge we stop to Poche’s. There food is awesome! Before we leave to go back home to Houston our car is filled with meat. Especially those stuffed pork chops!

You want businesses to grow? You want brotherhood to go across humanity? This the sorta businesses and stories you go for. As much as we love our Asian foods, we got an idea there, where to go and all. This, even if we got the idea, we don't always know where to go.

Creoles vs. Cajuns - I still have to try these two types of unique Louisiana cuisine, through these 2 ethnic groups == Southern / Soul Food and the spicy a$$ Cajun food : catfish, Mac(aroni) an Cheese, Cabbage and Collard Greens, Chocolate Crumble, Corn Bread, Strawberry Crunch, Peach Cobbler, Candied Yams... I have tried Grits (in an box = okay, it was instant, and I added salt and/or sugar..) I am All for the/Da Culture !!! (the Homegrown Soul Food stuff) Ooh, Boba (bubble tea drinks); Althas Deli; Oyster Po Boy sandwich, Budan (Rice and Stuffed Sausage), Hush Puppies, Breaded Okra, Fried Chicken, a lone Tamale, Pecan Pie, Gumbo, and Crawfish Etoufee. Other Food served by Althas Deli: (alli)Gator Nuggets, Rabbit and Deer (Venison) Food... Mike Tyson has Pigeons... What ?!?! I think that Otters are Cool !
