Ingredients:
Pork Belly - I was using a 3 lb portion.
Mixture of "The Butt Rub" and Dark Brown Sugar. My mixture was 2 parts rub, 1 part brown sugar - (Use whatever flavor rub you like if you feel like mixing it up)
Dark Brown Sugar
Honey
Salted Butter Stick (I used 3/4 stick for 3 lbs of pork belly)
BBQ Sauce - I used my Kansas City Sweet BBQ Sauce Recipe • How To Make Different ...
Directions:
- Preheat grill smoker to 275 degrees (f). I added maple wood chunks to my charcoal, to intensify that sweet flavor.
- Cube up your pork belly into 1 inch cubes.
- Cover cubed pork belly with your dry rub mixture. Feel free to get crazy here and try different rubs that you like, or even a your own mixture of flavors. Don't forget to let me know in the comments what you tried!
- Place seasoned pork belly fat side up on cooling rack if you have one. This makes it easier to transfer from prep station, to smoker, back to counter. Heres a link to the one I have
- Place pork belly in smoker and leave, without peeking, for 2 hours.
- Check your pork belly with an instant read thermometer or probe. They should have little to no resistance when poking them.
- If the pork belly shows some toughness still, keep them in there another 30 minutes to an hour, until they start to loosen up.
- Remove from smoker, and place pork belly bites in a tray or foil dish that can go back in the smoker.
- Cover the pork belly with a healthy layer of brown sugar, honey, and pats of butter. Cover with foil.
- Place back in the smoker for 1 hour.
- Remove from smoker, remove covering and take in the smells. Stir the bites around in the juices.
- Baste, mop or slather with your choice of BBQ sauce on the top. I have prepared my own Kansas City Sweet BBQ sauce
- Place back in the smoker for 15 minutes
- Remove from juices, or don't, and let them cool.
- Enjoy!
