The brand of the shoe is Bow-Tie. I did not know it before doing my research. It is a Spanish brand but greatly inspired by the British style. So you're right, it looks like Loake :)
Hello ! The stitch length can be adjusted on the sewing machine. So I first do some tests on scraps of leather to make sure the stitches will fit correctly with the original sole.

Bad example of resoling a full sole. It should be a complete one-piece leather the entire length of the shoe.
I can't be sure, but I think he recrafts to a specific price point.
