    Hello Rosie, your dough needs less flour (or more water). You can also easily make your own sour dough-starter and keep it in a glass (with lid). Instructions to make it are very complicated sometimes, but it is actually very simple. Mix rye flour, a little bit of yeast and water and let it rest at a warm place. Add some flour and water every day for five or six days and mix well. After that it should be smelling sour and build little bubbles. It is ready then. For baking take some starter and add again rye flour and water to the glass. Making bread is very satisfying. Good luck! Greetings from Munich/Germany

      I make sourdough yeast using juniper berries and fronds. There are other evergreens that you can use to create your own wild yeasted breads. Just keep it fed with flour and water and you can have a nice pan cake every other day and yeast for bread when you need it.

      Yes! You don't even need yeast in the beginning, it will use natural yeast that is in the air. Many instructions for sourdough bread are very complicated with a lot of rules, and it deters people from trying because they can't be bothered. I have been making my own bread every 5-8 days for the last 5 years since I moved to a place where there is no bakery nearby and the supermarket bread is not what I want. Because I don't need "The Perfect Bread" every time, but I can live with a bread that is 85% perfect and still 3x more perfect than supermarket bread, it is actually not hard at all. You mix your flour, salt, and water with your sourdough, you leave a bit of sourdough in the glass and fill it back up with flour and water so you will have it ready for your next bread, store it in the fridge after it has started rising, and then you let the dough rise, maybe fold it 1-2 times to make it keep its shape and make sure the yeast is evenly distributed, and there is not that more to it. You don't even need to kneed the dough for 20 minutes as Rosie does here. Yes, if the bread has to be The Perfect Bread, then you follow all the rules, you consider the humidity in the air and whatever else they tell you to do, but if you just want a good tasting bread, 85% perfect is fine. Just mix your dough, wait until it looks as it is supposed to, and you bake it. And then you eat it, and you have to make another one.

    I had to cut off a large bit of my thick wooden countertop. I did it with my pretty japanese saw. The whole time I told myself, think Rosie, think Rosie. You poulled me through 😅 I was rewarded with a nice clean cut. Thanks!

    Love the bread making. You inspired me and now I make three loaves a week. One for me, one for my daughter and one to give away or stock in the freezer. My next project is to sew a love seat patio cushion for my outdoor bench. I am in awe of your courage with all the drawers and drawer guides. This spring and summer will be so fun with your deck.

    I've been baking bread for 55 years and the two best bits of advice I've ever gotten are 1) you can't knead the bread too much, and 2) the dough should feel like a baby's bottom.

    Forgot to mention my main reason for commenting. You inspired me to make an apple gallet last Fall. I always make applesauce in the Fall and can it so I have it all year. Well last October there were some apples left over and I was afraid they would spoil before I could eat them so I decided to try making an apple gallet which I saw you make. Wow! I am not a pie maker so this will be my goto.Thanks so much. Really really enjoy your videos, so relaxing.

    Just a heads up from a workshop joiner of 30 years, storing finishing timber outside that is to be used inside, especially red pine which is very hydroscopic, is a bad idea. External timber stored under a roof will have a moisture content of somewhere between 17-25% in winter. Once inside it will dry out massively. 6-10% depending on temp/ humidity. You will get significant shrinkage, not good for drawers

    The dough is a lot easier to knead and gets fluffier if you take less flour. The sour dough is better if you start it by yourself. That product is like a package of yeast, they want to sell more of it but happy if it works as a starter. I am lazy nowadays and take a couple kryddmått of yeast and just mix the ingredients for my dough and let it stay in the kitchen overnight and bake it in the morning. Happy Sunday! 🌞

    Dear Rosie, sourdough does not always want to be kneaded so long. What makes it fluffy is the airbubbles -you are destroying them by kneading. Most recipes require resting and folding instead.

      Agreed. Additionally, the action of kneading takes practice, not too firm, or too gentle. I am still learning this. The kneading creates gluten fibers and as you said, the air bubbles are also necessary. Looking forward to watching Rosie master bread-making, I believe she will!

    Hi Rosie and I hope that you are keeping snug and warm in Sweden. I just wanted to tap on my keyboard and encourage you with your bread-making. I have been making my bread since 1996 when I discovered that me and my family had lactose and gluten intolerances. So, here a few tips that might assist you. 1. Don't give up, each loaf will improve with your experience. Just like your building projects. 2. Bread rising can be complicated in a snowy, winter environment. Before I purchased my dehydrator that has a bread rising setting on it, I used a covered hot water bottle inside my microwave oven. The warmth of the hot water bottle in a small, enclosed, and draft-free area was all it needed to rise. 3. Wholemeal/Whole-wheat bread doesn't rise as well as a white loaf of bread. 4. As you knead, the gluten relaxes within the dough and becomes less sticky from kneading alone; so avoid adding large amounts of flour initially to your kneading area. Have it on the side to add when you need it instead. 4. TH-cam. Watch homesteaders or cooks that are experienced in making the same loaf of bread that you are attempting. Mike Greefield from LifebyMikeG always makes his own sour-dough bread for his family. Jamie Oliver has reliable recipes on home-made white bread. 5. Bread Flour, it is called in Australia. What is the equivalent in Sweden? It is worth the extra expense and will assist your loaves to become lighter and fluffier. I hope that this assists you in your bread-making. There is nothing quite like a warm slice of fresh bread with slices of cheese on top. Yum.

    Canadian following you from England. You are so inspiring. There must definitely be something in Dutch culture that generates multi talented and versatile adaptability to life. You've likely been told this but Martijn Doolaard is another Dutch YTber self starter living in a different country in Europe. Of course these traits are merely human not exclusive to a culture but it is pretty incredible to have a similar male counterpart approaching remote living the same way 😂

    You may want create a sour dough starter you can feed -- it makes great bread. Also a cast iron pan may distribute heat in your small oven better. I love homemade bread!

    your bread adventures inspired me! I haven't baked bread for a while, and after your last video, I made myself a GIANT raisin loaf! I'm still eating it lol. I don't know if you want to try this, but I like how it makes the bread crust - after I get it out of the oven, I wrap the loaf in a dampened cloth, like a bandana or similar and let it steam for a bit. Then I take the damp cloth off and let it finish cooling.

    Someone gave me a bread machine that has a dough cycle. I think they all do. I've used it to mix, rise and knead my dough saving my arthritic hands from the trouble. It has also worked for pasta dough. I love it. Use the dough to make what you want.
    The drawers are so nice and I think you made the right choice on size of the rails.

    Ahhh sourdough bread is my hobby. The secret is all about level of hydration. As a beginner I would suggest you to go with 65% water to flour ratio. You don't need to knit it, just do couple of folds while you are waiting for it to rise. Your house is colder so it could take up to 8/10 hours, then form it put it in a floured basket inside a plastic bag and in the fridge throughout the night. But then to have it fluffy inside, but with a nice crust on the surface you will need to install the big oven, that you already have. Sourdough bread needs to be baked in a dutch oven with the lid for like 30 min and then another 10-15 without the lid. Good luck with it. Once you master it, you will never go back to normal bread. It is time for the big oven to get installed.

      @@TheGarnetObsidian Give this a try :) Keep a sour dough starter going at all times - buy the kit or start it yourself. Take 1/3 cup starter, 3 - 3 1/2 cups flour, 1 tsp regular yeast, 1-2 tsp salt, 1 1/2 cup water. Mix well. Let sit overnight ( 8 - 12 hrs) covered with plastic wrap. Put dough on bench knead 3 to 5 times. Let it rise as you preheat oven and dutch oven pan @ 350 for 30 min. Put dough in dutch oven. Add lid, bake at 350 for 30 minutes - remove lid bake another 15 minutes. Check that the bottom "thumps." Cool 30 minutes - if you can. Yum. Sourdough is the best. You'll be making a loaf a day. Remember to feed your starter after removing the 1/3 cup. Adjust this recipe to yourself as you like.

    Wonderful drawers. Thank you for showing how easy and great the drawer runners are to install. We live on a farm in south east Alberta Canada and I have a little garden cottage to work on. This summer is securing an already built deck and trellises and building a small greenhouse. I have old windows to use and a lot of timber that has been up in the loft. You make me feel it is possible to do all these projects . Thank you for the inspiration!❤

    Hi Rosie! I'm a 77-year-old woman and I've been watching your show since I found it on TH-cam. It's very interesting. About your bread that you just made. I don't think you have a lot of experience in bread making--it takes time. If you thump the bread on its bottom after taking it out of the oven and it sounds hollow. It's cooked through. So enjoying your vlog.

    I was making bolillos (Mexican rolls) while listening to your video this morning. I had my earbuds in and your video playing on my phone. It’s interesting to get the audio first and then rewatch later with full visuals.
    I use a modified no-knead technique where I mix the ingredients well with a spatula, cover the bowl with plastic wrap, and let it rise in the fridge overnight. I have time, and it turns out great. I think making bread from scratch is a wonderful act of self-love.
    I just went to my local supermercado, and they had bolillos on sale-three for $0.99 USD ($10.99 SEK). For some reason, I found that really funny. 😁

    Such a good use of leftover tongue and groove boards ❤. My husband starting making us bread 10+ years ago. During covid we struggled to get flour and had to buy a loaf of bread and my goodness it was so sweet and sticky, we hated it 😂. I guess your taste buds just adapt after a while.
