Korean style pork cutlet (Donkkaseu: 돈까스)

- Today I’m going to introduce you to the Korean way of making a pork cutlet, called “donkkaseu” in Korean. It’s an iteration of the Japanese tonkatsu which was the Japanese take on the European schnitzel. It’s a hot, savory, breaded pork cutlet, and my version is served on a bed of rice and Hi-Rice sauce, with a side of kimchi and a side of cabbage salad.

AHHH it looks so good.
Maangchi, do you think you could make a video or a list of a "survivalist guide" to what to stock for a Korean pantry? I often find myself missing key ingredients in your recipes. :(
망치님은 한국사람인가요?

0:23 I am German and I never heard anyone say the word "Schnitzel" cuter than you did.
Your channel is an endless source of inspiration and I thank you for that. Gonna try your beef bulgogi these days. I'm sure it'll blow me away.
Only it's not a schnitzel
@@gunnarfromnorth2504 Butterfly-Schnitzel - that's the best description.. allthough, this is not really Schnitzel-Meat, the preparation is almost exactly like Wiener Schnitzel.
The Panko is the second difference - We germans are using breadcrumbs made of full bread.
genau das dachte ich auch
Alguém sabe o nome da farinha pra empanar? Ela n fala 😢
@@RoseNogueirapima First you toss the seasoned meat in simple farinha, then in betaen eggs and finally in breadcrumbs (you could use Japanese Panko). Hope that helps.
watching this at 1.04am is the worst decision i've ever made in my life
Gillian Trippyy that's what i was just about to comment !!! why i did watch this at 1am arrrr its more like torturing

You know when people say things like "oh my daughter is the cutest thing in the world" or "oh my wife is the cutest woman" No. They're wrong. Maangchi is the cutest woman in the world.
sidenote: this Donkkaseu looks so good.
Sofia Anna submitted Greek caption! Thank you so much, Sofia!
Maangchi delicious 😋 جميل جدا👌
Maangchi: "Cooking is fun, isn't it?" *continues to hammer on the meat*
Me: I have no doubt about it.
Well, this is sooo europian. I am from Czech republic and even though I dont prefer meat, seeing this kind of meal on a plate is like a small wink from the other side of the world. Sometimes I'm really surprised, how many connections are there between so different cousines. Potato pancakes are like our treasure, and thanks to you, I know, that they are even in Korea. The same with dumplings, porridges, pork meat, and even with this schitzel (I know, different garnish than potatoes, but it doesnt matter). Just another seasoning, other garnish, but the core is the same.
Ahoj! S pozdravem z Ameriky!
i like it when you put no music, it feels gives the video a homemade and personal vibe
Portuguese caption for this video was submitted by one of my viewers! Thanks a lot!

Hi, Maangchi I absolutely love your channel! Love all of your delicious recipes, last night I tried this recipe for my son and my husband and it tasted incredible! Thank you so much!!! :D
Wonderful!
you know what I love about about her more than other cooking channels, she eats the food at the end instead of eating it off camera.
Oh my gosh. I love this recipe. So easy and fast and so yummy and crunchy.
Wow. Try this out. It all came together in about 30 mins. Just plan it out.
I really like the way you cook Maangchi. You use the basic ingredients creates Korean food. It’s not complicated and tastes good.
You're so right, it doesn't matter where ideas come from, so long as it's delicious and made with love like you always do then it has to be great!
I adore you maangchi ! I can watch your videos like 10 times and they’re just as amazing !
Maanchi I made this tonight , it was my first time making pork anything..my kids and husband loved it, it was so crunchy and super delicious. I can't believe I made a five star meal. Thank you great teacher ❤️👍🏻😀
I'm very happy to hear that your family loved the donkkaseu you made! Happy cooking!
I made this for my family, and they loved it. Only difference is that I made Japanese curry with potatoes and onions. Thank you so much maangchi ❤❤💕👌🏼 for sharing your recipes with us. I really appreciate these recipes because I like the Asian culture and I love to cook. I'm 15 and learning more and more from you maangchi.

엄마 음식이 최고죠? 엄마 음식과 비교해주셔서 너무 기뻐요!
I made this tonight and it was delish! I didn’t make the gravy, but the thin pork chops I used were perfect. My daughter absolutely loved it and requested the left overs for lunch tomorrow 😁
Great job!
@@Maangchi awe thank you! I make your braised tofu all the time too! Can’t get the daughter to touch that yet though! 😂

That's great!
I made it for the first time tonight! It turned out so good and perfect for gravy, ketchup, or that salad dressing for the shredded cabbage. The shredded cabbage was oh so delicious, too. I don’t know if it is my cooking talent or your excellent teaching but I have yet failed at any dish of yours that I’ve tried to duplicate.
Wonderful!
One of the best restaurants I've eaten in was a Korean restaurant in Ft.Lee, NJ..there were 8 of us for the 1st time & still is the highlite of all of us..
I loved eating 돈까스 at the cafeterias in Seoul! We would go to E-mart and eat at the big cafeteria. I would almost always order 치즈돈까스 and share it with my husband. I will have to make this as a treat! Thank you Maangchi!
On Kauai we had a local chain of restaurants called KCL - Korean, Chinese, and local food. I have had donkkaseu many times. Delicious stuff! They just called it port cutlet, though.
I love watching Maangchi eat at the end of her cooking.
Hello Maangchi (@Maangchi voice) I have been watching your videos since you started TH-cam! I love your recipes, they are simple and delicious! I can’t forget to mention how enjoyable you make it seem in the kitchen.
I made this dish today again and every time I make it it just seems to get better and much more enjoyable.
💕
Stay safe out there and keep making these awesome videos. I know it is a lot of work but you are amazing and we need more of you in this world 🥰
Thank you so much for following me and my recipes for a long time! 👍
That looks superb! It always makes me smile to see similar dishes from around the world. As Maangchi says this is based off German schnitzel. It is very similar to the fried pork steaks with gravy over rice or potatoes I ate as a child in the Southern U.S. The breading we use is a mix of flour and corn starch with salt, black pepper, paprika and onion powder. The gravy was just a roux of flour and butter with whatever fresh stock we had recently made (It's always good to keep a freezer full and waste nothing!) We almost always eat it with a cabbage slaw with sliced scallions, carrot, reddish and tomato. The mayo based dressing has a little prepared mustard, sugar, salt, apple cider vinegar and a splash if water. Very similar flavours, I'll try your recipe very soon! The addition of the ketchup to the gravy and the cabbage dressing looked delicious. Thank you Maangchi!
I made this and it was excellent! Will become a standard meal in my house.
Thank you so much! Stay safe.
Fantastic!
Looking tasty! I have to tips for the schnitzel that you maybe want to try. To flatten it you can use the bottom of a pan, this way you don't break up the structure of the meat that much and it's quicker. The second tip is for the panade. When you don't press on the bread crumbs but almost sprinkle them over, your panade gets a lot more fluffy and airy. In germany we say the best schnitzel have a bubbly panade when the meat is fried. Sending Love from Germany 😊
"Cooking is fun!"
She says innocently while hacking a pork cutlet to oblivion.
Sounds like a weird cooking creepypasta
I'm from Brazil and I love your recipes. I'm really fond of oriental food and have tried out some dishes and I can honestly say that they were really good when I finished preparing them. You're really friendly and funny. Always keep up with your good recipes. Tks a lot.
I wish to cook Korean food as good as you do one day. Your a great inspiration and I watch your videos every night before I go to bed. Keep up the great work 😊 your truly a blessing.
Thank you Maangchi ! You are so great !!!
I always had this for dinner when I lived in Suwon South Korea. It's so good. I miss it very much. They served corn and cabbage. With kimchi. My goodness. I miss it :)
Chinese (Taiwan) caption is up now! One of my viewers submitted the caption! Thank you so much!
One of my absolutely favorite dishes of all time! I can eat this anytime of day. :D
In Mexico, we make a cutlet like this called Milanesa, and we often use steak and pork, but put it on a sandwich roll with avocado, mayonnaise and lettuce.
Her pronunciation of schnitzel is just tooo cute
Ive tried making this 2 days ago for my family and it tasted really awesome! my family loves it so much! This is my first time cooking this and definitely wont be my last! Thanks a lot for the recipe maangchi!!
Jeanne Sangadi wow, I'm so happy to hear that! Congratulations!
What could be a good substitute for hi rice syrup?
돈까스소스 만들때 하이라이스가루를 사용하는 레시피는 처음봐요. 진짜 신기하고 간단해보이네요. 꼭 해보려구요!
I beginning to like Korean food...I like it already...I like her cooking videos
I used crushed corn flakes and it was so crispy. I used same recipe for chicken and it is the best chicken fried chicken ever. I also used beef and fish fillet and they were good as well.
Everything it's so clean, the food look delicious, your personality it's so genuine, love your videos.
I love crunchy foods as well. I really like how you shredded the cabbage and I will also now shred like you do.
That looks like a mexican dish called 'Milanesa de cerdo'.It is cooked exactly like you showed us today. But we accompany this dish with fresh lettuce salad, maybe guacamole, a dash of lemon juice and some french fries.
Emmanuel Campero It sounds good! Thank you for sharing your culture!
***** Actually it originates from Italy, that's why it's called MILANesa, but now every country has their own version, we have it in Colombia, Japan has their own version called Tonkatsu, very similar to this korean version, China has their own called zhazhupai, and many more! cheers!
stuckIN801 The Original Wiener Schnitzel is an austrian dish and it's not porkmeat (it's the little cow...i don't know the exact word, sorry). In germany we call it Schnitzel Wiener Art, it's similar to the original but we use porkmeat.
And the original piccata milanese is made from "little cow" (sorry), too.
I'm an italian living in germany.
Maangchi i love this channel and your reciprs tastes always good. I like it that you use so many various vegetables. I love them. And your meatdishes are delicious, too.
hey man! In English we call 'little cow' veal :) Beef is a grown cow and veal is a baby cow. :) Thanks for sharing your culture by the way, super cool!! :)
doesn't matter are the slurs necessary?
I love watching your videos, you're always so bubbly and happy and excited sounding when you talk about what you're doing! I wanted to let you know that watching and listening to you cook things is amazing, and always puts me in a good mood. I'm hoping to try making a few of your recipes when I can stand long enough to, they all look amazing.
Thank you very much for your nice words! Cheers!
I LOVE your cleanliness! Thank you! 💛
Hi im judy from Philippines. Ive known you for quite a bit and i am enjoying your channel really. You deliver in a very detailed way so im learning a lot from you, though some of your ingredients are hard to find here.
maangchi, i love the way you present your recepies.. i am lucky that i found found channel...a lot kimchi i made i love it
I swear this channel is turning me into Randy Marsh in that ep of south park where cooking shows where like adult movies. The audio engineer for this should get an award. The sounds of sizzling foods, bread crumbs rustling around, metal clanging on bowls... it all excites every part of me. Why.
You'ra having food orgy..
You are SO right!
The skill set, recipes, and adorableness of Maangchi are incredible, but I find myself mesmorized by the sounds. It really makes these videos superior. I thought I was the only one that found the sound exceptional. I am hooked!
Let's not forget the hair dresser
You should work in a kitchen? Can you take heat?
i really love that you include food history
Czech caption was submitted by Oneul (TH-cam channel)! Thank you so much!
Maangchi what kind of breadcrumbs should I use?
You can make it at home. Just take already hard pastry (bread) let it harden even more. Than grate it a there you go. It will work well too. And what I am doing is pour little bit of beer into the eggs. IT will give to the "schnitzel" tiny tiny bit different taste, but it won't be such a taste kick. Because your aim is to make it flavorlul as much as you can. You can also instead of breadcrumbs use unsweetend cornflakes. Just crash it.
바삭바삭~ 맛있었어요.
소스가 좀 되직해졌지만 아이랑 신랑이 맛있데요^^♡♡
요즘 망치님 요리 한개씩 해먹는 재미가 솔솔 합니다~~
@Maangchi: I love all of your videos. You make Korean cooking- look fun! plus, you have the best personality. I'm happy that I found your channel.
+Robert Casey Nice meeting you here! Happy cooking!
Made this recipe today. And the flour, egg, bread crumb layerr really made it crispy. So delicious. We had to skip the gravy but the recipe still turned crunchily delicious.
That's like the ultimate comfort food. Reminds me of food from the Southern US! I'm gonna have to try this on a cheat day lol
It looks so good it makes my mouth water, I’ll have to try this soon
Oh my, I fell in love when you've said "Schnitzel"! :D
This and Jajangmyeon were the main dishes I ate where I was living in South Korea -- over time it got repetitive! But I am glad you put the name up on the video, as I was trying to recall the name a few weeks ago.
"We need more breadcrumbs"
"we need more eggs"
oh the constant struggle of breading meat
I love this recipe. I work near a small Korean owned convenience store and they started making food. I usually visit in the afternoons and I became their test subject for the food lol. One day they gave me this and I was so confused thinking it was schnitzel (which I already loved) but wow... this is so much better than the German style. Can’t wait to try and make it myself.
Totally LOVE your channel!! Super stuff! You are incredible!!
She's Imazing. No doubt about at. Super 👍
🤘🤘
You know what... 1st I love your channel because you are such a lovely person. I could listen to you all day, then seat and eat with you. 2nd I think, just like everybody who like your channel, you are so wonderful to cook like each one of us. You don't have all the fancy gears I know I'll never be able to buy. You just cook with love and spread it. That is so cool :) Thank you so much
"Cooking is fun! Isn't it?" I love Maangchi!
I started watching your videos 12 midnight and have not slept the whole night!! I am so hungry!! missed these foods!
This is one of my favorite Korean foods.
I love how she just keeps on trucking even when something isn't perfectly measured out (like needing one more egg or another cup of bread crumbs). Kind of like a Korean Julia Child lol.
I wish more tv cooks had the same feel of realness that this wonderful lady has!
Dear maangchi I really like u and all your recipes take care and good luck god bless u
매력이 철철 넘치는 망치님~~귀엽고 애교많고~음식도잘하시고 굿~~~~♡♡♡
하이라이스로 소스를!!~~
당장해볼거예요 쌩유~~
I don't know why, but you are the only cooking channel that I've watched over and over again. LOL. I think maybe you are so cute and so real, really a genuine person. Keep the good work Maangchi!
I was mindblown when you started tenderizing it with a knife. I never heard of seen such thing before! Amazing!
"i want to look cool with knife and fork oooh like that's western style"
me with chopsticks
Hi Kim! I made this dish last night but instead of using the otoggi curry, I used the japanese version since it's the only one I have in my pantry. My 7 yr old son and I ate it for dinner and at lunch at work! It was tender and crunchy. I love the golden brown color. The next time I visit the Korean store I will make sure I get the otoggi hash so I can try that as well. Thank you for inspiring me to cook again.
As I'm learning Korean, thank you so much for the Korean subtitles :D
kingkingjustin oh, nice! : )
I am from Austria (the place where Schnitzel comes from) and I really like this approach of making Schnitzel. I'll definitely try it out!
We have "cotoletta" in Italy!
It's really similar to 돈까스!
Maangchi I love watching your videos!
You are really nice and cute, you explain well what you do and I see (we all do) that you enjoy cooking! I started cooking some Korean dishes thanks to you, because you are a great teacher!
Keep doing amazing videos, please!
항상 응원할게요, 파이팅!
Hello!
You are so great! I am Korean love Korean food but never had a chance to learn how to make real spicy Korean dish. For that it is perfect chance for me to start something new at my 71!
Thank you so much. Love you videos with your bright smile!
I made this! I didn’t have the right kind of pork so I used boneless, skinless chicken! Yasss!!! Delicious! Next time I’m using the pork!
This is a Polish pork chop! Variation - in Poland it is served with sauerkraut and mashed potatoes.
I really like that most of the ingredients you use are easy to find
This is actually very similar to one of the most traditional Polish dish. We call it "Schabowy" and it is eaten in every Polish house very often! Instead of putting the meat onto deep oil we just put the meat into around 1-2 spoons of oil and it still remains the crunchiness.
Just recently found your channel and subscribed. You are delightful to watch.
