So similar to my grandmother's recipe but... she always cook the meatballs after frying them in the sauce for at least 15 minutes. The meatballs cooked completely and took on some of the flavors of the sauce and the sauce was enhanced by the flavors of the meatballs! She then removed them and served them when the pasta was ready.

Mom used to use stale Italian bread and soak it in a little water or milk to soften it. She made the best meat balls with the same ingredients you used. For the holidays, she would put some pignoli nuts into the meatballs! Buon Appetito!!

Celene, you do a great job ! So cool to actually get in to Rao's ! Yes, it is in the recipe book but it is so much easier to prepare at home watching someone else do it hands on. Thanks again, hope all is well. A note to visitors , get a reservation at Rao's weeks ahead of your trip 😮

My grandma had me in the kitchen every Sunday before going to Mass rolling meatballs at the ripe old age of 8 years old. I will never forget those memories....the recipe was the same.

I grew up in East Harlem on 114th st a block away from Raos, it was my dad and uncles hang out, and went to school across the street. I’m 86 years old and got this same from my grandma. Before Raos became the it place it was the hang out for the local wise guys. Just a little trivia

My recipe is basically the same, but I also add a half cup of sautéed, slightly golden diced onion ,cooled to room temperature ,to the meatballs mix. I save my leftover stale bread and completely dry it out to make bread crumbs in my food processor.

I love the single clove of garlic in 2 pounds of meat 🙂 The big question I guess is do you do the slurry method and mix the bread crumbs with your liquid (water or often milk) and egg until batter consistency, which fades into the background but does its job of giving strength to the meatballs, or go the more thanksgiving turkey stuffing approach of letting the bread crumbs keep more of a textural identity. I've been a slurry guy for decades but will change it up as an experiment. I mostly do meatballs in the oven as frying can get the outside a bit more browned than I like, but that is totally a question of taste. Great video !!!

My brother eaten there twice because he knew a friend that knew an uncle that owned the table. He told me those meatballs were massive amd delicious. Sadly dont think ill ever experience it, but your recipe ill hope to make them and hopefully come out close to that. Thanks!

Try baking the sauce to thicken it. Using a dutch oven wont hurt the flavor but will give it that texture. You know what texture im talking about. Ive always burned my sauces with a pan. Until i learned dutch ovens take italian sauces to the next level.

Anthony works in the grocery store
      Savin' his pennies for someday

A heart attack (ack, ack, ack, ack, ack)
You oughta know by now (oughta know)
Who needs a house out in Hackensack
Is that what you get for your money?
It seems such a waste of time
If that's what it's all about
      Mama if that's movin' up
      Then I'm movin' out
      I'm movin' out
Sergeant O'Leary is walkin' the beat
At night he becomes a bartender
He works at Mister Cacciatore's down
      On Sullivan Street
      Across from the medical center
He's tradin' in his Chevy for a Cadillac (ack, ack, ack, ack, ack)
      You oughta know by now
      And if he can't drive
      With a broken back
At least he can polish the fenders
It seems such a waste of time
If that's what it's all about
      Mama if that's movin' up
      Then I'm movin' out
      I'm movin' out
You should never argue with a crazy mind (mi-, mi-, mi-, mi-, mi-)
      You oughta know by now
You can pay Uncle Sam with the overtime
Is that all you get for your money
If that's what you have in mind
If that's what you're all about
      Good luck movin' up
      'Cause I'm moving out

      I'm moving out

@@TheRecipeTherapist Thank you so much for responding - I am going to make these tomorrow, and your video was GREAT since it was so true to the "original" recipe (as per the NY Times). I appreciate your comment about the size, because I thought the ones that you made looked really big.... they must be about the size of big oranges at the restaurant! I was unsure about the amount of water, but I see how you did it so I guess I will just close my eyes and follow the instructions. I am still not sure if I am going to fry them or bake them - I have read that both techniques work equally well since I will finish them off in the sauce. Anyway, thanks again for your video. Been there 3 times actually ate on the John Gotti table. Food is good but honestly there are better Italian restaurants this place just has a history. Meatballs are good same recipe that every Italian woman growing up in the 1930s and 40s used. Same exact recipe my grandmother used for decades sometimes she would use milk instead of water. They have really gone commercial now Food is not nearly as good as it used to be especially in Las Vegas. Still worth a trip to Harlem but not the Las Vegas location.
