Coconut oil is used in this recipe because it's solid at room temperature, so when you refrigerate the pie it solidifies and retains its shape when sliced. The creamy part of coconut milk and tofu aren't solid at room temperature, hence they can't be used to replace the coconut oil in this recipe. Hope this helps! :)
Hi! you could definitley use the creamy part of a can of coconut milk that has separated naturally, but it would probably be a little less firm. Give it a try and let us know how it turns out! X
