    Oh my Gosh! What a fantastic trip I have to do! I didn't know the Canary Islands look so pretty. It seems like an easy recipe to do, I'm curious about how it would taste so I'll make it myself very soon!

    As soon as travel is a safe thing to do I have to explore Spain, it's been on my list for a long time now, you've certainly inspired me. I like that this a very honest, regional recipe using regional food and techniques. Very authentic chef. Well done.

      Thank you very much Geoff! I try to learn as mush as i can where I work! I will be happy to help you plain it! just let me know! I have been to almost every part of Spain! :) and with airb&bs in the Canarias it cost us about $15 a night! so not bad! haha

    My travelling mind was in the Canary Islands while I was watching the landscapes, the cities, and the beaches of this region down of Spain territory.

    I've never been to the Canary Islands before but they look amazing! What a great easy potato...my mom would make something similar to these when I was a kid. LOVE THEM!! Great recipe James!

      Really?? that's interesting! the first time I came here i noticed that there is big difference in how we cook! a lot more oil and less butter. there are only a few places that I would really like to return too, Hawaii, Greece, and the Canary Islands! thank you!! :)

    Wow! This brings back so many memories as a child! My family used to make this all the time. Like a great amount of Cubans, we are descendants from people from the Canary Islands. So much of our foods and customs are similar to that of the islands including our way of speaking Spanish. Most often we will say "Papas arrugah" The version I remember the mojo is slightly different, but there are many recipes for this. What remains constant is the way of making the potatoes. And NO! They wont be too salty!!! LOL

    That brings me back to Tenerife. 1993-2002 my Grandmother and I went to Puerto de la Cruz for 2 or 3 weeks.
    In our favorite Restaurant, The Rancho Grande, I had the potatoes with the mojo. Thank you for bringing back the memories.

    Lovley tapas sauces and great tips on the potato. I think here in England I would use Jersey potatoes. Nice video from the Canaries

    Tenerife is my favourite vacation island. My stepdaughter lived in Los Gigantes for 6 years. I love Playa de Las Americas area and we as a family visited there every year about 9 times. Now after six years we are finally going back there in December, I’m so exited. I just love these Canarian potatoes and mojo sauces, I can’t find those potatoes anywhere in my country. I have tried to cook many other brands but they just don’t taste the same. I’m so looking forward to all other amazing food too to eat when we get there, like campas al ajillo, champinones al ajillo, tortilla española and of course Paella.

      I like Tenerife a lot! And there are a lot of places to visit! If you haven't gone, you should visit lanzarote the wine is very unique and the park timanfaya is a must see!

    This is a lot like Syracuse salt potatoes, from upstate NY, but probably easier and uses less salt. And they serve with just melted butter. Love your channel; thanks!!

    What is salt molding? Is it like coarse salt.

      salt maldon it's flaky, it's used a lot in the kitchen for garnish.

    why you need to use malden salt? isn't the salt going to get corporated with the water anyway no matter the consistency?
