    Like the way he praises his staff. His presenting his restaurant is so understated. Is that typical British. He is proud of his restaurant, his food and his staff.

    The calm, confident energy that Ed carries himself with is really impressive. Definitely wise beyond his years, and the type of lad you have no issues busting your ass for! Food looks tremendous, looking forward to trying it one day. 👍

      he is arrogant as hell. maybe rightfully so but modest ist the last word you‘d associate with someone saying: „6:15 is too short and 6:25 is too long“ he is trying hard to say the right things too balance off his cockiness but just is a pain to listen to

    He is so knowledgeable! I feel like you can’t learn all that stuff in cooking school alone. Also super humble and the food looks so good. Such a colorful creative display of food, and environmentally conscious too! Gotta go here

    This guy has nailed it. Taking influences in the food from St Johns, decor from Hawksmoor and then overlapping his own skills to produce some really great versions of British classics. The Scotch Egg is brilliant...I would never have thought to encase the egg in lamb mince...and then to add Indian spices...that's really clever. I know it will taste great and its something totally different to any Scotch egg that came before it.
    Very impressed....this guy will open restaurants all over the world I'm sure.

      It's not an original recipe but it very similar to nargisi kofta which is an Indian recipe

      Yes it is kind of like a nargisi kofta. He makes it really delicious though. I had it just today. It was incredibly tasty

    I love how the passion for what he does isn't belied by his calmly confident demeanour. The ethos is terrific and unwasteful, and that beef cheek pie looks gorgeous

    I want a beer with this man. Seems so down to earth, and lovely. I also want to eat 7 of everything he made here. British food gets a bad wrap, but when done well, the rich and simple flavours are hard to beat.

    I have never tried any of these dishes but good to see people trying to use everything possible from an animal instead of wasting it.That egg looks like something I will definitely be trying soon. Just love seeing anything being made by people with care and passion.

    Just went to his restaurant today. Incredibly incredibly delicious food. One of the best restaurant meals i have had in a while. The scotch eggs and pork loin were absolutely divine. Not exaggerating. I plan to go back there next month again.

    Really humble and has a calm energy. Would love to try this place one day! (Side note, when he was swishing the beans in the pot for the pork head dish, I thought they were eyeballs at first as he just talked about trying to use all the animal lol)

      @@GuRReN1495 They are typical if you go to St Johns, Fallow, Dinner by Heston or any other modern British restaurant in London particularly. These recipes are probably actually base on very old British dishes.

    A pie does NOT need a side or bottom. Even if it's just a lid it's technically a pie. Mary Berry says that and she's never wrong.
    Pies are defined by their crusts. A filled pie (also single-crust or bottom-crust), has pastry lining the baking dish, and the filling is placed on top of the pastry but left open. A top-crust pie has the filling in the bottom of the dish and is covered with a pastry or other covering before baking. A two-crust pie has the filling completely enclosed in the pastry shell.

    Really enjoyable video, the pig's head terrain I must try to do it looked delicious.
    I like my black pudding for breakfast cooked in bacon fat the traditional way, but my favourite is black pudding and Cumberland sausage rolls or black pudding added to burger meat.
    Ed Scotch eggs are now gourmet food in England, with many artisan varieties.
    Have you introduced sausage rolls, the most popular takeaway food in the England yet, as a starter?
    I am a great proponent of good British food. Would love to see him do a steak and kidney pie and a fish pie. We have French and German friends who turn their noses up to Steak and Kidney pie when they know that's what they are going to get, but it's great to see the amazement on their faces when they tuck in.
    Also, same response when trying the best West country Farmhouse Cheddar when served cut from the truckle, especially with Stinking Bishop as an alternative to highlight the amazing cheeses now produced in the UK.

      Grass fed means nothing in the USA besides at one point in the cows life it ate Grass. Similar to the term "natural "

      he was hugely oversellimg Europe (ESPECIALLY UK which has by far the worst in the EU, edited for clarity, the US sucks harder, but UK still isnt good) food standards in general.
      but I guess thats just what happens when you dont live "home" anymore and the rose tinted glasses appear.
      anyways - grass fed is a more strictly protected label in Europe, but maaaaybe 10% of cattle actually gets raised that way. Europe isnt this weird elven utopia, its still a capitalist society, and most people dont want to pay for good protein.
