My Mom died a year ago. My kids and everyone loved her chicken casserole and it freezes awesome too! I used to double it, and freeze one for those busy nights. I can cream of chicken soup I 1!2 cup sour cream I cup shredded cheddar 2-3 cups shredded chicken 16 oz frozen veggie mix I can chopped water chestnuts (trust me lol) 1 tsp garlic powder 1 tsp pepper Salt to taste Spread in a pan and top with crushed Ritz crackers mixed with a little melted butter Bake at 350 for 30-45 minutes 😊

The starch is almost invariably 2 balls of rice, usually white steamed rice, but could also be fried rice with veggies. It's called the Loco Moco. It's an island favorite food. Even IF it's not on the menu*, most places here that has the other ingredients can and often will whip up one on request. * Most however will have it on the menu and it's usually available all day, not just during breakfast time.

Back in the early 1980's, my farmer father-in-law took me to a little cafe' in Polo, MO for their lunchtime "Blue Plate Special".....Hamburger steak, mashed potatoes and gravy, green beans, a dinner roll and a tall glass of unsweetened ice tea! I think this got topped off with a piece of apple pie. Now, that was truly "....eating good in the neighborhood!"

And yeah, I grew up eating mashed potatoes and hamburger patties. Usually with canned peas or corn on the side. Gravy wasn't that often, but generous butter on the potatoes was.

I don't add it while cooking, I add it later just for me. I was having nighttime leg cramps and I started eating avocados daily as I thought it was a potassium or magnesium deficiency. NOPE. Turned out I just wasn't getting enough salt. The USRDA is 2300mg. That's almost a teaspoon of salt. That's a lot of salt. We need salt

Mix the hamburger with egg, crumbs, onion and seasonings then reshape into patties. It's basically meatloaf but much tastier and yields 30% more food.
