      Not to mention the fat content in them Cashews for the frosting..Maybe after I lose 40 lbs I will try this at a moderation piece

      @@wendyeesue the fat in that amount of cashews is nothing compared to the butter and milkfat and lard they put in regular Carrot Cake. and ya, its a dessert. definitely not an every day thing.

    I made this cake on Monday and we had it today for my daughter’s birthday. I was so nervous that it might not turn out correctly because the batter was so dense, like a dough, that I had a plan B. Well, I am so happy that everyone loved it! This is the first time I baked a truly plant based dessert. Your videos are great and I have been learning a lot from watching them. Thank you!

    Ok! It's in the oven as I am typing this. The only thing I changed was using almond extract instead of vanilla because I like that flavor in carrot cake. In addition to cinnamon, I also used nutmeg and allspice (1.5 tsp, 1.5 tsp, 0.5tsp respectively). Thanks for the lovely recipe! I am glad to find alternatives to almond and coconut flour.

    So tasty! My husband and I have been enjoying this as our dessert this week. I skipped the icing to save some calories, and it is still so good it's hard not to gobble it up too quickly. I didn't have the banana flour, so I used almond.

    My husband is eating this up way too fast. 😄 I didn't have enough carrots, so I used shredded, peeled sweet potatoes. Worked great!

I added traditional chopped pecans in batter. I can’t stay out of it!! 🤦‍♀️ I’ve made your black bread, green beans, stew and all have been perfect !

    I am 21 days into living a healthy plant based life. This looks AMAZING... but I am almost 50 years old and I know myself enough to know that this will awaken my sugar addiction like nobodys business. lol I will have to modify and find a way to make something just as special but won't have me eating the entire thing.     I just added walnuts in the dough and sliced the two layers in two extra, so the layers are thinner.

    I made this last night. Very good. The next day: delicious! I should have followed your instructions on soaking cashews for 24 hours because my frosting didn’t come out smooth, but still so yummy. Thank you for this fantastic recipe!

      You can also boil your cashews in a pinch until soft

    Just ate a warm slice of the carrot cake I made as soon as I got home from work. Yum! I'm very happy with the result. To save some calories I halved the frosting recipe and it was perfect to top each layer, leaving the sides naked. Next time I make this I will increase the lemon juice as I think it could stand a bit more tang. To save additional calories I used soy milk instead of coconut milk. While making the cake and doing food prep, I made some ginger juice and saved the pulp for cooking. This recipe didn't call for ginger, which I love, so I added about 1 Tbsp pulp and it was just the right amount. I know I should have waited for the cakes to cool before I frosted and cut into them but I just couldn't wait. I'm glad I did because it was a nice little snack after a very long day.

    I just made this. The texture is very chewy. My dad and I named it oatmeal cake LOL. The flavor is not bad. And I like the icing. My dad said it was kind of bland but I can taste the sweetness. It's very subtle though. It was okay. But I didn't love it. I will say that it is a very healthy cake though with the large amount of carrots, the dates and the oat flour because oats are extremely good for you and high in protein and iron. High in fat from the cashews but I would say that this is a very good cake if you are looking for something that's actually healthy and not too sweet.

      It may be a commercial Vitamix "The Quiet One" blender which has noise reducing features.

    Hint: don't forget to pit the dates!
    The first time I used them in a smoothie, I had hard inedible chunks in it!
    Also, if you have a tree nut allergy, look up plant based frostings-there's a few good ones out there that do not use nuts.

      Debbi Maxwell I learned the hard way to careful to not gets pits in the blender. Many times I have had to pour my smoothie through a sieve.

    You know this is such a relieve! It’s simpel to make, you look so “normal XD” not over fancy it’s so nice for people to relate to what I very much like !! Also you don’t use oil, agar agar and al those other complicated expensive stuff!! Just that genius blender that I do not have but I can use a soup mixer for that probably! Go on girl, bring up more cool recipes 😀!!!!

    Oh my goodness! You are too good! Carrot cake is one of my favorite cakes. I usually buy a vegan carrot cake at a whole foods store. I don't have the patience, nor am I into baking when it comes to desserts/pastries. Thanks for sharing!

    I really want to try this. I’ve been off cake since going whole-food plant-based as I’m avoiding oil and added sugar, and also refined white flour, so I thought cake was really OUT!! My hubby and I are definitely watching our weight. This looks totally amazing - love the idea of basing it on oat flour, and all the sweetness coming from the dates. The frosting looks fabulous too! I’ve never heard of that banana flour, though, and see you can get it from Amazon but it’s very expensive. Would the recipe work without it, or is there a substitute? My favourite cake was always coffee and walnut. Could this cake be adapted for that, do you think?

      You can use all oat flour or replace the banana flour with almond flour. I have other cake recipes that would work better for adapting to coffee or walnut flavor. They are in my desserts section.

    Can something be substituted for the cashews? I can't eat nuts. I also can't eat coconut, and you used coconut milk in the frosting. I'm assuming that any kind of plant milk will work though

    Hey Jill, for the Frosting you use Full Fat canned Coconut Milk both solid and liquid part? (Because it separates almost when chilled)

    Hi Jill love your show and have tried now a number of the recipes and bought your book, one issue is for many deserts have tree nuts and o have a daughter who is highly allergic to them any suggestions on any replacement of the cashew nuts or tree nuts for recipes that still give a great taste?

    I want to use whole grain flour along with the oat flour do you suggest this will be ok ? Also coconut milk for the frosting, can I use an alternative milk?

    This looks so delicious! Will for sure be making it. Can I substitute something else for banana flour? I live in eastern Europe and it is not available here, shipping for ordering online is extremely expensive.
