  • Just in time for your Christmas feast, Chef Jacques Pépin shares his take on Mashed Potatoes and what to make with the leftovers!
    Mashed Potatoes Serves 6
    · 2 pounds Yukon Gold potatoes
    · 4 large garlic cloves (peeled or not; see the headnote)
    · 3/4 teaspoon salt
    · 4 tablespoons (1/2) stick unsalted butter
    · 1 cup milk
    · 1/8 teaspoon freshly ground black pepper
    · Wine for Cheers!
    Gratin
    · Eggs
    · Pepper
    · Orange Cheddar
    Peel the potatoes and cut into large chunks (2- to 2 1/2-inch pieces). Drop the potatoes into a pot, cover with water, and add the garlic and 1/2 teaspoon of the salt. Bring to a boil, reduce the heat, and boil gently for 22 to 25 minutes, until the potatoes are tender.
    Push the potatoes through a food mill into a bowl. Add the butter and mix in thoroughly, then add the milk, mixing again until incorporated. Mix in the remaining 1/4 teaspoon salt and the pepper and serve.
    Leftover Mashed Potatoes
    Mix leftover potatoes with eggs, pepper, orange cheddar -into a gratin, into the oven.

    love how casually he talks about the late joel robuchon, one of the greatest french chefs ever to walk the earth. and to be honest, he absolutely can, as he's seen and done it all already. while remaining a down-to-earth, humourous, all-round absolute charm of a man pretty much anyone would love to spend a day (or hundred) in the kitchen with! who at 84 still mashes potatoes by hand like it takes no effort at all!

      If mashing potatoes by hand takes significant effort, you're either using the wrong potatoes or undercooking them. It really shouldn't be much work.

    Jacques makes me feel more confident about doing things like grabbing a bit of butter with my fingers from the butter dish. Like if anyone ever fussed at me for it, I can say “That’s what Jacques Pepin does.”

      @Beliko R people have different view points on that. When I worked in the kitchens, I was one of the cleanest cooks and always cleaned up my area rest of the kitchen. There is a way to work clean and fast, even when you are crazy busy. I’ve been in some kitchens where I have seen it at the end of the night and it looked like a bomb went off in it. I called them slobs.

      Me too! Started watching Julia in the early 70s and Jacques shortly thereafter. Glad to have a couple of his books also. Any one remember Graham Kerr, the "Galloping Gourmet"? He was my first TV teacher. Have his first book too.

    Helped teach me to cook. The Julia & Jacques series is still the best ever. No recipes just great technique. A national treasure. Love him!

      I agree I grew up watching him and still love how he cooks, he is genuine and not overly scripted and dramatic, he is a real chef and I know cause I used to be one for a long time. His cooking, however not perfect but is beautiful to watch. He Pulls it off like a a real pro in a kitchen, no one can tell unless you were trained, but that does not mean its bad, just shows he is the real deal.

      My wife gave me that book in 1999. My favorite is the duck with parsnips. It's a cut up, pan fried duck. This is likened to Southern fried chicken - a bird cooked in its own fat. Memorably good recipe.

    have watched you all during your career. first time when you were teaching danny kaye how to cook in the 50s i believe. you were a hansom black haired boy....a fine cook even then. and i thank you for all those years.----betty

      I absolutely adore Jaques. Always watched him when possible. I loved when he cooked with Julia Child on occasion. Remember how he was very frugal and would use limp veggies for soups ? He would say, "Don't waste anything." He's the best.

    I've been watching him for I don't how how long. Every time I see him use black pepper, I think of Julia Child getting on his case for not using white pepper.

    Back in the 80's this guy taught me about using olive oil on my potatoes be they mashed, baked, fried or w/e. I've been in his debt ever since!

    I like the idea of the garlic boiling with the potatoes because it will come out soft and easy to infuse when mashing.

    I love this man so much! Dad used to pile mash in form of a mountain, indent the middle and pour cream into it with parsley and more cracked pepper. Oh man, it was indulgent heaven.😍😍

    I was so happy to see that Jacques has a TH-cam channel! I learned my knife skills and much more watching him as a kid! He’s still a great teacher. Proper technique without being preachy or arrogant. Class.

      Teddington Bear I am not a native speaker, how many languages do you speak? Apart from that, just try the nutmeg, that’s the logic. Also plenty of other chefs do it. He also doesn’t add any sweet to his vinaigrette. He is like Jamie Oliver. Just cooking, but doesn’t care about the extra mile

    I couldnt make toast without burning it before I discovered this fine fellow... he has my gratitude - - I remember as a a young kid in my Grandma's house she always used to put a small piece of coal in a pot of water that had peeled potatoes in to keep them from going manky

    I love you, you inspired me to cook from a young age! I was shocked to find you living in CT! I live in Moodus CT very near you. I would love to meet you sometime and just shake your hand. Thank you for being a role model in my life when A father was not possible.     It's so fascinating how he speaks with this heavy french accent but when he says the word "water" it sounds so distinctly american that it takes a few words for the accent to pick up again. Edit: 1:10 for the segment discussed

      ​@@alibitokbayev3811 neither, what you are picking up on is the result of being immersed in the United States, is actually quite common for people with accents to lose them after a certain period of time. I’m surprised that his accent hasn’t remained because most people who come from another country retain their accent without any change to it or at least any major change once they reach a certain age, it’s more common with younger people to lose their accent than it is with older but it isn’t unheard of.

    I’ve watched him all my life. He’s a wizard in the kitchen. He had a nice show with Julia Child then she died. Felt like I had lost a wonderful friend. Now I’m 77 so me and Jacques Pepin are next. We’ve had a lot of good meals though!

    I like that he gives you options and one masher is not the best but he "likes" to do it this way. Very good teacher.

    My Wife loves mashed 'tatters. I must try adding the garlic (we love garlic). I usually add butter and plain yogurt instead of milk. Salt & pepper, and that's that!

    so the TH-cam algorithm works for me. i get lots of his videos and they are all great! such a nice person. although I prefer nutmeg over garlic in my mashed potatoes 😀
