The big fish @ 3.50 is what we call a European Carp , a menace in the Australian water and rivers. Most people do not know how to prepare them as the histamines in the meat is what is unpalatable to the cooking . When you can , swiftly dispatch the fish and straight away into an ice bath or cooler/eskie full of ice and maybe some salt to drop the temp as well . Cut the fish behind the head and fillet ,then skin . If done correctly , the fish should be tender and likened to snapper. Great fishing dude , cheers from Australia
