Hi was wondering Why not soak the bread in the leftover eggplant juice . I think would add more flavor than just water. Thanks for sharing your Nonna 💕 with all of us. Great recipe
I see this became a new staple for me. Never enough eggplant either!! Have you ever considered using the eggplant juice instead of water? Of course adding water if not enough juice. I wonder about using milk like in regular meatballs?
I don't think her videos are horrible, but I agree that she should include Nonna a bit more. However it may be that Nonna is a little camera shy so this way works better. I don't know, so I won't judge.
