Homemade Mac and Cheese - 6:00
Bring a large pot of water to a boil over high heat; add macaroni and 4 1/2 teaspoons salt. Cook pasta until just barely tender, about 5 minutes. Drain and rinse with cold water to stop the cooking process.
Spray the inside of a slow cooker with cooking spray. Add pasta to the slow cooker and stir in milk, evaporated milk, butter, cream cheese and pepper. Whisk together egg and egg yolk in a small bowl until well combined; stir into pasta mixture. Set aside 3/4 cup shredded cheese. Stir remaining cheese into pasta mixture, cover, and cook on Low until bubbly and lightly browned around the edges, about 1 1/2 hours.
Sprinkle with reserved cheese, cover, and cook until cheese is melted, about 15 minutes more. Serve immediately. Alternatively, turn crockpot to Warm or Off until ready to serve.

The egg is used for your binder the flour part would be your binder. And a can of evaporated milk, is the same as when you put it in with your sausage for biscuits and gravy it just gives that extra richness and makes it nice and smooth. At least that's how my grandma made it in her 1970 ish crockpot. I can still remember that nasty green color of a crock pot.

Lots of great mac and cheese recipes out there, but can't wait to try using the slow cooker. The best baked one comes from Williams Sonoma site - it's called Smoked Macaroni and Cheese, We've been making it for almost 20 years!

I've made a similar recipe, but it involved taking it out of the oven every 5 min for 20 min to mix in milk and cheese so it wouldn't curdle, making it in the crockpot would save so much time!

You don’t need to lock down your crockpot lid if you are just using it at home. Those side locks are only if you are transporting the filled crockpot to another location.
I make mine in the crackpot, too. And yes, freshly shredded cheese makes a world of difference. The coating on the pre-shredded cheese changes the flavor.

For better effects, add mayo and thin slices of ham, or Schneider Redhots if you feel naughty.
Nicole, how about running it under the broiler, if your insert will take the, to brown the top.
I’m not sure how oven-safe those inserts are, but if you’re sure it is then go for it!
