    Why is this in F#

This could be either one of two reasons, one being that Philippe thought that the choir could be brighter and that the key of E Major as printed was a bit too low for the chorus. Therefore he raised it
Or (although I'm kinda doubtful on this one) it could be the rate at which the vinyl was played, which in this case would be too fast, therefore raising the pitch. But this could cause some warping in the speed of the disc.
      Hope this helps

The first chord as written on the sheet music is in Em, but the choir recorded in Fm. The real tune is Major.

@@NMA59139 It's because meantone temperament. It used only chain of fifth form Eb to G# and other accidentals were forbidden. Therefore it must be written in G minor and mis-transcribed as E minor.

To tell the truth, the words should be : ALLONS GAY BERGERES, ALLONS GAY
    SUIVEZ MOI,
    But - not MUA. MUE.

      Avec l'orthographe actuelle, plutôt :
"Allons, gai, gai, gai, bergères, [...] soyez légères, suivez-moi !"
mais c'est un chant de la Renaissance :
"Allon, gay, gay, gay, bergeres, [...] soyez legeres, suyvez-moi !"
Effectivement, la prononciation n'était pas la même qu'actuellement :
le "moua" d'aujourd'hui se prononçait davantage "moué",
quant au "Roy" [roué], il est devenu "roi" [roua] !

I've heard some recordings that use the Renaissance pronunciations which actually rhyme. (Also preserved in some varieties of Quebec French today.)
