    Whatever you do never get your bannaton wet. You don’t wash them but wait for them to dry out and brush them, if you get the wet the cane will soak up the water and the old flour and your basket will go mouldy. As for the 'hat' a shower cap workers much better.

    Just so I understand you tension the dough and put the tensioned side down in the banneton then flip it out to bake. I like it! And now off to Amazon!

    Jack you nailed it in the first 45 seconds mate. Been using semolina so it was cool hearing you suggest the same. Banneton will be purchased as you suggest so thanks again.

    I don't have a proof basket. I use a mixing bowl lined with parchment paper. Mist with water so it can be pressed flat. Put dough in to rise. Lift out by 2 opposite corners. Place in Dutch oven. Slash dough, put cover on. In oven it goes. No air is lost what soever. Nicely made boule every single time. Easy, no tipping. The top is always up.

      I do the same, with one exception. I slash the dough before I place it in the preheated Dutch oven. It's easier to slash when I don't have to worry about getting burned.

    There many sizes out there. Perhaps you could explain which diametre to chose depending on the weight of the dough?

    Thank you! No one ever told me what those were for. Now that I know I will purchase a couple. That way it helps with the support which as you know, I have often struggled with. So it's best to dust with rice flour if not making a sourdough?💟💟 Since I don't have one yet I am going to try the colinder thing..     hi Jack.. i love my Bannetons.. any hints of keeping them clean ..i put mine in the oven after baking the bread..figuring that anything undesirable will get cooked! (you do have to remember to take it out the oven before your son decides to switch the oven on again!) mmmmm the smell of baking bannetons!! cheers Jack!

    I love your energy Jack!! I hope you can help me - my artisan bread looks wonderful going in oven but then disaster happens. The sides pull up and i end up with a hard ball. It seems to get good oven spring but it all seems to go up. I do score the bread . I would love to hear your advice. Thanks so much - keep the information coming!!

    I use rice flour or cornflour to dust inside my bannetons - no gluten (which I think is how dough sticks??!!). They're great - highly recommend. Great vid Jack!

      I sometimes use rice flour to dust it. But if I'm baking with whole wheat flour, I often sift some flour with a fine mesh sieve and use the remaining bran to dust the banneton. Doesn't stick and has a great appearance.

      Yep - it means the loaf just pops straight out of the banneton, rather than having to struggle to get it out! Then slash it, and into a very hot oven (I make sourdoughs - yum)!

    Do you do anything to the banneton when you first get it?! Or do you just dust is with flour and add the dusted dough?

    A banneton basket is not needed for a log-shaped-tin-loaf, right? Because after stretch n fold, make the log and put it in the tin, wait for it to puff n bake.. Am I right?

    Hello, was wondering what size is this round one you're holding? Issit S: 13x6 cm, M: 18x9 cm, L: 20x8 cm or XL: 25x8 cm? What about the rectangular one? I'm trying to buy them online, never bought one before. Any help would be great, thanks!

    Hi Jack, my question is: How do I tip the dough out of the banneton without knocking air out of the dough? I try to be as careful as possible but often the dough falls out and inevitably deflates the dough somewhat.

    Hello Jack. I just recently discovered you on TH-cam and I'm hooked. So I need to ask if I can't find a basket to make my sourdough bread, is there something else I can use until they are back in stock? Seems they are sold out everywhere for a bit. Thanks in advance for your reply,

      Colander with a tea towel (do not use a fibrous towel, I tried and it was a disaster lol), and I'm also trying this week with a couple of bowls, also lined with a tea towel, but also using extra towels under the tea towel to make it the shape I want as using just a plain bowl allowed too much spread last time I tried it.

    start with a collander and use it until your bread looks good and you had a fair share of fails and learnd lessons.
    THEN buy the banneton. it will pimp up your bread 1000x times

      A homemade wooden proving bowl?! That would be awesome! I think a key part though needs to be that it’s breathable. So however you figure that out I’d love to see it!!

      Yes I think so - modern ones are made of wood pulp but supposing you turned a wooden one and used a lathe to carve the grooves? What I have on mind is making one out of clay and carving the grooves out at the hard leather stage. Then, smooth it until it's shiny, let it dry and fire it in a pit.

    Hi, Jack! One question: I don't have an oval banneton (I actually don't have any bannetons at all but for round loaves I use a colander and it works pretty fine), but I really like baking bâtards, so can I use a regular bread pan lined with a cotton cloth to proof them, just to hold their shape? I often bake batards without them but they often come out flat hahahah Thanks for your videos!

      If you are doing a few in one go, get some cloths, dust them well and put them in your table. Put the batards on the cloth with a big raised pleat in between them, and buddy them up next to each other to prove up together with the cloth pleat to stop it sticking. Make sense?? 😐

      It does, of course! The problem is putting it in the oven after prrofing without deflating it (I've tried it once, ruined the whole batch)..., that's why I wanted to know if bread tins are ok (I know they don't have holes to let the moist go through but that's the only vessel I have for that)

      @@gabrielfranco3598 I know this comes late for you but may help others. Stack them side by side like baguettes or large ciabattas (dough upside down). As you'll have taller doughs than baguettes, give more cloth to the pleats and flour really well. Then cover the lot with another floured cloth. Then to release onto a peel is also the same as baguettes: flatten pleat on one side; place peel alongside dough; then using the pleat on the otherwise to push and flip the dough onto peel. Repeat for other doughs.

    I really don't understand the sizes of proofing baskets.. is the dough weight for baskets only the amount of flour used?

      It’s the dough weight. My baskets are 1 kilo baskets but my dough is normally around 850-900 👍🏻
