    Marinade for skirt steak:
    One 12 oz Mexican Beer
    1/4 cup of neutral cooking oil
    3 tablespoons of lemon juice
    1 minced garlic clove
    1 teaspoon of Cumin
    1 teaspoon of Garlic Powder
    1 teaspoon of Onion Powder
    1 tablespoon of Mexican Hot Pepper Sauce
    Salt & Cracked black pepper to taste
    Heat oil, and add in garlic and spices to release their oils, then add in lemon juice, and turn the heat off on the burner, add in salt, pepper, hot sauce and beer. Mix well, and set aside. Make sure marinade is at room temperature before covering skirt steak.

    I have used this marinade for years! Nearly 50 years! This is so good on skirt steak!

    Another cut I like for flavor is the hanging tender……most flavorful cut on the cow!

    Brother, you’re the real southern deal when it comes grilling a meal! I’ve been making your RedBeans Rice and your gumbo using “Uncle Larry’s - Ready Set Gumbo Roux”! How you explain and teach is fascinating and easy, your channel is definitely my favorite and educational. Nothing like firing the grill up with a cold beer while watching you on the big screen on my wrap around porch. Take care and until next time, keep the grill hot brother.

    Dude. That skirt steak. As much as I like a good fajita, it’d be so hard not to slice up that steak for some killer simple grilled steak tacos with onion and cilantro + a squeeze of lime. I’m a steak taco slut. LOL
    Is there enough room this grill do a brisket or a spatchcock Turkey? Would love to see you tackle both of those in this little cooker.

      How many inches is under there from the grate to the lid?

      @craigjohnchronicles2504 Shouldn’t be a problem but they do make a roll top grill with plenty of height. The lid on this on is around 6” above the grate
