I've been cooking my bacon lately (a whole package at a time and usually best if Thick Cut) by cutting the strips in half, pulling the strips apart and layering it, in a covered Dutch Oven...I usually add bacon grease but it's not necessary, it just gets it started out quicker) Don't worry that the strips are layered. Place the lid on. Stir/flip the bacon every few minutes or so....usually takes about 20 30 mins or so (the bacon renders it's grease and basically "deep fries" itself) It may not be a full length strip and may not lay completely flat...but there's NO splatter mess...totally NO fuss NO muss....but will give this a try. I will definitely have to try this method! This reminds me of how I'd cook bratwurst or sausages which haven't been pre-cooked--putting the sausages in a pan then adding a small amount of water, boiling it off and browning the sausages. I would never have even thought to do this with bacon! I'll let you know how this turns out, and thanks for the new method, Buzz!
I'll try this - funnily enough I had started boiling pork before cooking or frying and that seemed to have more flavour too, I didn't think to try bacon.

I need to cook up 2-3 pounds of bacon at a time. Plus I want all the grease I can save.
