me personally i always add one small egg to the recipe i get a better result and color hold better for my personal taste

Never thought about using the dough scraper to cut and blend the dough , while bringing it all together.....I'm stealing that move, for sure!
@@brooklynpastalab What is the real difference between water and eggs pasta while using Semola Rimacinata flour? I have also seen recipes that call for a 50/50 - 00 flour & Semola flour. Is there a difference in the taste and texture?.
