I'll tell you what, the smell of a turkey in the oven is one of the best smells in the world! My Mother did the turkey for our extended family for many years-taught by my Grandmother. I used to feel sorry for my cousins because they didn't have that smell on Thanksgiving morning.
Absolutely the best smell in the world to wake up to on Thanksgiving morning. I purposely put my turkey on at night just for that reason. When I get up in the morning I am ready to go ahead and get the rest of my dinner done. Lord help me if I'm cooking my ham at the same time. Love brining my turkey and studding my ham with whole cloves.
Chef I heard you say that you had some haters, I don't understand the reason behind that kind of attitude at all. What the world needs now is kindness and love. I love what you do and you know your stuff when it comes to cooking.
Cooking takes love, passion, and patience. I don't talk on the phone, but will talk to someone in the kitchen helping me. I like staying focused as not to burn my food. My very first time baking a turkey was to a bring 'a dish' gathering for about 30 people. I combined everything I recalled from my mother and watching the very best cooks at church of which I asked questions. The woman that hosted us, cooked on the Chef level status, was amazed that it was my first time bakng one. She bought an already prepared bird from a grocery store. I went into the kitchen to get more of my turkey. The hostess's store bought turkey was half way eaten while the one I baked was setting in front of her, picked to the bone. Not even the dressing I made was left. That speaks for itself! 😊

I've always put my seasonings and butter under the skin to make the flavors soak into the flesh. I don't always get that beautiful golden crust. I'll have to remember to save some of my seasoned butter for basting during the process. I also use a roaster oven for my turkey so the oven is freed up for all my other sides. Looks beautiful.
I made this turkey yesterday including the brine and herb butter. It was delicious and tender. Thank you Chef. I will do this again. Also I did cook it at 325 and it worked out. 17# and almost 4 hours. I will be brining and using herb butter every year. No more dry turkey.

@@sharonwigfallllmm2818 first it depends on the type of grill or smoker you have. But I will say the same preparation of how you season and marinate your turkey is the same. The smoked turkey can be flavored from the wood or charcoal with different flavors from Applewood to Mesquite or even Post Oak. I will recommend putting a temperature probe in the breast and set it at at 160 degrees because the residual heat will finish it and come up to 165 so you you know that white meat tends to take longer to reach the temperature then the dark meat but don't take it out at 165 because the residual heater get it higher than 165 and you get a driver that's my experience
Thanks Chef Jeffrey, Mr.James a regular barrel pit. I also have a pit thats made with iron steel and I have a box smoker too. It has the triangle corners that you have to put charcoal down in the corners after you light them. There us basket you would put the turkey down in to smoke. You have to keep adding coal as they cook down. Sounds like a long job with that one. Are you on fb ?

I use lime to clean my chicken..and cut up a lots of onions bell peppers and garlic to put on the bottom to keep moisture..keep from using water..the water takes off the seasonings

I'm in the south and the weather over the weekend is in the teens, so I got a bucket/lid that I purchased & washed it out for the turkey & the brine. I mentioned the weather cause my fridge isn't big enough to hold it, so since the weather is cold enough, it will be my fridge. I love your recipes that I have made. My Mom was an excellent cook. She always made the best Turkey salad from our left over turkey. She ground everything that went in it in an old fashioned meat grinder, (turkey white and dark, sweet pickle relish, maybe some red peppers for color, celery onions, eggs, and I’m not sure but I think a bit of yellow mustard and some miracle whip. I have never been able to match the taste. Do you make Turkey salad? If so please post. I know it would be good.

I love your recipes that I have made. My Mom was an excellent cook. She always made the best Turkey salad from our left over turkey. She ground everything that went in it in an old fashioned meat grinder, (turkey white and dark, sweet pickle relish, maybe some red peppers for color, celery onions, eggs, and I’m not sure but I think a bit of yellow mustard and some miracle whip. I have never been able to match the taste. Do you make Turkey salad? If so please post. I know it would be good.
