Pleasantly surprised by the fine point of when to add the butter (or oil ). In most of the TH-cam vids we see they add oil straight in the marinade. NOOOO ! Let the acid (Vinegar, lemon juice etc.) to carry the marinade into the meat then add the oil/butter at the end. Otherwise the oil will seal the meat.

Not refrigerating it makes a better kebab from my experiments. I do the first marinade for about 45 minutes and then the second one for about 1 hour or less - all at room temp (70F-75F) . Made it last night and the junta enjoyed it! Wah!
Cheff it was very nice..but it is most common everywhere..the difficult part is..very few restaurants serve it with a layer of frothy egg white..which actually gives it a smoothy and silky texture and taste...would love to learn that layer off frothy egg white around this creamy kabab
