I grew up eating Pelau, but instead of Pidgeon Peas and beef my mom made it with chicken and black eye peas. Sad I've never been to 🇹🇹 but both my parents are from that country and I'm the first out of both my families to be born outside of 🇹🇹
In Trini we make pelau (pigeon peas) and then cookup (black eyed peas cookup, lentil peas cookup etc.). Pelau and cookup are similar, but two different meals.
Pelau is a traditional rice dish from the West Indies Its main ingredients typically include meat (usually chicken or beef, rice, pigeon peas or cow peas, coconut milk and sugar. Various vegetables and it’s seasoned with a bevy of pungent herbs and aromatics, scallions, cilantro, parsley, thyme, onions, ginger, garlic, and Scotch bonnets . optional spices can be added. Common spices used in the dish are cardamom, cloves, cumin, and coriander OPTIONALL.). The meat is caramelized in brown sugar along with onion and garlic and the other ingredients are then added one by one, resulting in a dark brown stew.
Pelau is not Biryani , cardamom, cloves, cumin, and coriander have no place in the pot. Please stop posting wrong information. The main green herb in Pelau other than the usual "green seasoning" is thyme.

Look at Caribbean Pot, Cooking with Ria, Taste of Trini or Cooking with Natasha, they all have good videos on how to cook pelau, and if you live outside of Trinidad they suggest ingredients to substitute for what is traditionally used that is not available in your country

Palau is similar to "cookup rice" in Guyana. Cookup rice is one of Guyana's national dishes, which is associated with Afro-Guyanese.

Cookup in Trinidad refers to another rice dish that is lighter in color than pelau and may have okra/o, saltfish, yellow lentils/dal etc
