Dang, I don't know how I missed this earlier this week. Very well done video and happy to see you use cod. Cod is a wonderful fish. Far to many folks insist on only doing Halibut but cod is fantastic and less expensive than Halibut. I want to give you a tip here. Always put a pin hole into vacuumed packed fish packaging before placing into fridge to thaw out. Here's the reason. The fish is already under a vacuum, we know this. Here's the problem, as the fish thaws out if you haven't released that vacume as the fish thaws it's going to turn the exterior meat mushy because it thaws out exterior first. But by releasing the vacuum pressure that's not going to happen. I was so happy to see you NOT use a thermometer in the fish. Yuppers, just look at the fish and it will tell you. I fact as folks get accustomed to grilling fish they will learn to pull just before its done because of holdover heat. Now lastly I want to mention I really liked the cast iron service plates. I've seen some that were even smaller and it got me thinking. I would love to use those to cook the fish. But I believe I would do something a little different than what you did. Pull the fish and set aside, then make the sauce like you did but in both dishes. Pour off the sauce in both dishes, place fish back in ( nowadays I don't flip my fish most times. I believe the presentation is better) and top each fish with the sauce. The reason I would like to find smaller cast iron dishes is so you could put the cast iron onto a larger ceramic plate. The cast iron dish would keep the fish warm and the ceramic plate could keep the side dish ( for example a nice pasta salad) cool. Plus I think it would wow your guests. Thank you for doing this video. I'm going on line to see if lodge makes those in the smaller size. I think they do. Great video even if you did only have a "one tongue " moment. 😋👍 Have a great day 🌤😁🍻.
Hey Victor. My original intention was to serve the cod in the cast iron like you suggested… but my wife ended up having to leave the house so I only did one and ate both servings of fish. I didn’t get the 3 out of 3 tongue idea until the next video! Lodge does make some of these serving dishes but did not have any available at the time I bought these. Take care Victor.
@@Viewtoagrill those looked so good I don't blame you for eating both. I did look for some small cast iron cookware that I believe would fit well on a plate. I love lodge and they have a few options but so do a few other folks. I'll let you know what find. I want to put together a serving set of at least 6, preferably 8 ( I like to serve fish often) as to your "tongue " reference I was aware you did this video before that one but I had to reference it anyway. My cooling racks... are you refering to what I put my fish on to defrost? if so, they are stainless steel and I just throw them in the dishwasher... if you are refering to my grill grates in the pellet grill... this is what I use.

Knowing how you like your other meats doneness I was surprised that you nailed the cod. I have to apologize for assuming that it would be overcooked. I keep forgetting that Texas has a coastline and fresh fish would be available. Thanks for doing some 'surf' =)

Why bother ? You could have done this on the stove. So much waste to get a pellet grill to 400 degrees....no mention of any smoke
