I always drank Dairyland eggnog, but my family always thought of these store bought eggnogs as more of a syrup, and you add milk (or alcohol of you so like) to it to dilute the sweetness and make a proper drink out of it.

I don't dislike eggnog, but i'm not a fan of it either. I could take or leave it. It's true that, up until recently, I've only had store bought. I then tried a few different recipes, and while some are better than the store bought, they're still just not that good. I make a batch for the better half and her daughter this time of year, but after they're done with it, if there's any left, it goes in the compost bin.

For me, the store bought carton stuff occupies an entirely different space than real eggnog. I love all the homemade recipes I’ve tried, but the carton stuff is nostalgic and reminds me of decorating the Christmas tree as a kid. I don’t bother with boozing up the cartons either, at most I’ll just grate some nutmeg and orange over the top.

I've made Dr. Rebecca Lancefield's eggnog for years. She was a well-regarded microbiologist, and her recipe is safe and delicious.
    1 dozen eggs
    1 pint bourbon
    1 quart rum
    1 quart heavy cream
1 quart light cream (I use half and half because markets around here don't bother stocking light cream)
Sugar to taste, usually about 1 pound
Beat the eggs. While beating, pour in the alcohol. Keep beating as you add the booze - if you stop, the alcohol may coagulate the egg proteins and cause scrambled boozy eggs. (This is probably the step that makes the nog safe - the alcohol concentration is higher in this solution than salmonella and other bugs can stand.) Once the booze is incorporated, stir in the creams. Add the sugar and whisk until dissolved. Put the nog in a jar (makes a bit more than a gallon) and leave it in the fridge at least overnight. It's better after 3-6 weeks. I've aged this recipe five years or more - it never goes bad, it just gets smoother and nicer. Serve with a light grate of nutmeg.
Variations: I've started using black strap rum and Demerara sugar to make a richer final product.

  • @brandond2768

I've really enjoyed Alton Brown's aged eggnog recipe.
12 large eggs yolks, pasteurized if you need peace of mind
    1 pound sugar
    1 teaspoon freshly grated nutmeg
    1 pint half-and-half
    1 pint whole milk
    1 pint heavy cream
    1 cup Jamaican rum
    1 cup cognac
    1 cup bourbon
    1/4 teaspoon kosher salt
Mix the sugar, salt, and nutmeg into the egg yolks, add the liquids.
if you do make this make sure to age at least a month in the fridge. The original recipe calls for a minimum of two weeks, I've found at least as month is much better, and a year is the best. Drink and enjoy responsibly.

Elmhurst also makes an "oatnog" that I tried, and it was literally the tasting notes you described for Chobani (but the consistency of the Silk -- water). Was a great mix in for waffles, though. I've lost 70 lbs so far and I'm not above making my own eggnog to keep it sugar-free. -- Egg nog is definitely a trickier one since milk actually has a bunch of sugar in it, so maybe an alternative with almond milk or heavy cream instead might be a good workaround? :)

I vaguely remember seeing or reading something a while back that said that the modern, non-alchy eggnogs are based just runny custards and based on something completely different from either a traditional eggnog or a Tom and Jerry. Since they would need to be pasteurized, I imagine making with a process that requires cooking anyway is probably simpler. The alcoholic ones don't really need to be as heavily pasteurized since the alcohol will kill a lot of bacteria.
I'm curious about this now so, I'm going to try to find the thing about modern eggnogs I mentioned above. I'll come and edit this comment with what I find, if I do manage to find it...
Edit: Yeah, modern eggnog is a descendant of sack posset and it is a type of custard. I don't know much about sack posset or Tom and Jerry, so it's possible T&J also descends from sack posset and eggnog descends from that but I didn't find anything about that.
Also, I *really* like all kinds of eggnogs--I don't think I'd enjoy the non-dairy ones you tried but I haven't tried them myself so those might be the ones that break me, lol. It would be fun for you to find as many different recipes as you can for it--alchy and non-alchy--and make and compare all of them.

The thing is you can pasteurize your egg and milk components separate before mixing your ingredients to keep from cooking away the alcohol...
