- Raspberry Zinger Poke Cake -- Holiday Food Series
Marie is making this beautiful cake as part of the Holiday Food Series. The recipe is for a regular cake but Marie substituted some of the ingredients with sugar free ingredients. It was very wonderful. We both enjoyed it very much.
Raspberry Zinger Poke Cake
INGREDIENTS
• 1 box (18.25oz.) white cake mix
• Ingredients listed on box to prepare cake
• 1 box (3 oz.) raspberry flavored Jello
• 2 cups hot water
• 1 jar (10 oz.) raspberry preserves
• 1 tub (8 oz.) Cool Whip, thawed
• 1 bag (7 oz.) shredded coconut
INSTRUCTIONS
1. Bake the cake according to package directions using a 9x13-in. baking pan.
2. After the cake has baked, remove from the oven and allow to cool for 30 minutes.
3. Poke cake every inch or so with the handle of wooden spoon or tines of meat fork halfway into the cake.
4. Mix the raspberry Jello with 2 cups of hot water until dissolved.
5. Pour the Jello evenly over the cake, trying to fill the holes as much as you can.
6. In a small bowl, microwave the raspberry preserves until easy to spread, about 30 seconds.
7. Pour the preserves over the top of the cake and spread evenly.
8. Top with Cool Whip.
9. Sprinkle the shredded coconut over the top.
10. Refrigerate for at least 4 hours before serving.
I made this sugar free by using sugar free cake mix, raspberry preserves, jello mix and whipped topping

Oh YUM. I’m definitely going to make this sometime. I love raspberries. Great idea making it sugar free. I remember when I was a kid there used to be raspberry jelly rolls. I never can find them anymore just strawberry ones. They were so delicious. Thank you for sharing this with us. Happy Holidays

It really looks so yummy and I do love that it is sugar free because I am trying to avoid eating too much sugar. Love Zingers a yummy cake Happy Blessed Thanksgiving love sugar free recipes. I have one for you take a small sugar free orange jello add one cup boiling water, Half cup cold water stir let set 5 min. Add one box of. Sugar free vanilla pudding stir add 1 can of drained mandrin oranges, add 1 8 oz sugar free cool whip stir till blended refrigerate a couple hours till set . You can use any kind of drained fruit or sugar free jello blessings.

Marie, I have a little bit of bad news for you in that I follow the markets rather closely and heard on Bloomberg Financial that, although Dollar Tree is doing quite well (up nearly 10% which is remarkable and certainly pleases their investor base!, they are nevertheless going to raise their prices on most items from $1 to $1.25 beginning in April 2022. Looks delicious. However, it’s not sugar free. I believe there is a lot of sugar in the cake mix as well as the Cool Whip unless those were sugar free.
We used sugar free cake mix and cool whip.

Your little Christmas tree is so cute. 2 days before Thanksgiving my 38 year old mixer bit the dust. I plugged it in and sparks flew out of the socket and tripped the circuit box. I turned the box back on and tried plugging the toaster in hoping nothing happened to it and there is nothing in that socket. I called for maintenance but I guess because of the holiday I won't get it fixed till next week. That scared me, I was shaking and was making a video too. That old mixer made lots of cakes even from scratch. Made me kinda sad. Your cake looks good.
So sorry about your mixer. Mine is very old also but I don't even remember when I got it. The new appliances are not made as good as the older ones. If we lived closer Calvin could fix that electrical outlet right up for you. Things like that scare me also.
