@@carolcarroll7046 I made the mojo this past February (7 months) and just used it for the torta. I think the most important thing is to keep the garlic solids covered with oil, so add some oil if necessary to cover.

Never considered Tortas until now. Removing the soft center is a good idea. Too much bread cannot limit the enjoyment of an otherwise good sandwich.
