- I love the casserole version of mac and cheese but nothing reminds me of my childhood more than the good ole stove type style. Creamy cheese sauce over noodles and not a concern in the world about my cholesterol. Ah the good ole days! Grocery List:
1lb Elbow macaroni
1 tbsp butter, unsalted
1/2lb Andouille sausage
1/2 White onion, diced
1 Celery stalk, DICED
1/2 Red bell pepper, diced
2-3 Garlic cloves, minced
1/4 cup Tomato sauce
1/2 cup Diced tomatoes (Fire Roasted if available)
3/4 cup Chicken stock
1 tbsp Cajun seasoning
1/2 tsp Smoked Paprika
2-3 dashes Worcestershire sauce
Cheese Sauce:
8oz Pepper jack cheese, grated
1 tbsp Cornstarch
12oz Evaporated milk
1/2 tsp Mustard powder
1 tsp Cajun seasoning
1 tsp Hot sauce
4oz Sharp cheddar cheese, shredded
1/4 cup Heavy whipping cream
1/2 cup Green onions, diced
Parmesan, grated
Bacon, crumbled

Whew this might be the deadliest Pour Choices recipe yet! Lots of great little tips that we had zero idea about, the mustard powder and nutmeg. Also great to see one with a prep/cook time that can be done after coming home from work!

Dude this is gonna be a hit for sure. Any recommendations for a garlic press. I bought a cheap one to make the Taco Bell quesadilla recipe and it clogs up and is a pain to clean. Also what is that big flat knife called? Appreciate the videos thanks for getting me away bagged shredded cheese.

I love the cajun flair! Have you ever used sodium citrate to make cheese sauces? It's an interesting method and ingredient to have on hand, especially when making cheese sauces for mac n cheese, nachos, dipping, etc.

@@Danielleb723 absolutely! I’d probably up the butter (fat that the sausage would have for flavor) and the Cajun seasoning (also inside the sausage).
Tried this out and it turned out good. However, because of the salt in all the ingredients its a lil salty. I probably could have NOT salted the pasta water and still been cool. Maybe the salt will fade after a day in the fridge...🤞
