It has always disturbed me that you’ll play the fifth fret on the EAD strings instead of just playing the next string as open. I know some people find fretting the fifth frets easier but I find the open string just easier

I think it's easier playing the 5th fret (not always) for some reasons. It's easier to mute the strings, the sound is more punchy and fat and not thin and metallic, and the fingering is also easier. When for example you play a G major scale or a A major scale you play the open strings or you play 3-5 2-3-5 2-4-5?

You should use a sponge for muting.

It’s actually impossible to do that on this. As the bridge pickup is right by the bridge so a sponge cannot fit
