    Dumpukht Koftay
    Ingredients To Make Koftas:
    Zucchini mince 2
    Onion minced 1
    Salt to taste
    Red chili powder 1 tsp
    Roasted and crushed cumin 1 tsp
    All spice powder ½ tsp
    Chopped green chilies 2
    Coriander chopped 2 tbsp
    Gravy Ingredients:
    Oil as required
    Onion paste 1
    Tomato blended 2
    Tomato paste 1 tbsp
    Ginger garlic paste 1 tsp
    Salt to taste
    Red chili powder 1 tsp
    Black pepper crushed ½ tsp
    Roasted and crushed cumin 1 tsp
    Turmeric powder ½ tsp
    Tikka masala 1 tsp
    Yogurt 1 cup
    To Temper:
    Butter 4 tbsp
    Chopped garlic 1 tsp
    Mint powder 1 tsp
    Red chili crushed 1 tsp
    Whole green chilies 4
    Method:
    Cut zucchini into 2 inch pieces and scoop out the center. Mix all the kofta ingredients and stuff inside the zucchini. For gravy heat oil. Add onion paste. Sauté and add ginger garlic paste and tomatoes blended. Cook for a while and add tomato paste and seasoning. Add koftas and cover with foil and put in oven for 15 minutes. Take out and put yogurt and tarka.

    CHICKEN SAJJI MASALA
    Ingredients:
    Chicken 500 gm
    Ginger garlic 1 tbsp
    Roasted and crushed cumin 1 tbsp
    Salt to taste
    Red chili powder 1 tsp
    All spice powder 1 tsp
    Cardamom powder ¼ tsp
    Coconut powder 1tbsp
    Tikka masala 1 tbsp
    Lemon juice 2 tbsp
    Oil ¼ cup
    Method:
    Marinate chicken with all the above ingredients and grill it in grilling pan.
    For The Gravy:
    Onion paste ½ cup
    Yogurt 1 cup
    Ginger garlic paste 1 tbsp
    Salt to taste
    Red chili powder 1 tbsp
    Turmeric powder 1 tsp
    Roasted and crushed cumin 1 tbsp
    Roasted and crushed coriander 1 tsp
    Chopped green chilies 4
    Lemon slices 6-8
    Butter 4 tbsp + 4 tbsp
    Oil ¼ cup
    Puff pastry 1
    Method:
    Heat oil and butter in a pan. Add onion paste. Sauté until golden. Add ginger garlic paste, green chilies and lemon slices. Add grilled chicken. Mix seasoning in yogurt and pour on chicken and cover it until oil floats. Take a pan put chicken in it top with remaining butter and cover with puff pastry and bake on 180 for 15 minutes.
    Sajji Masala For Sprinkling:
    Nutmeg ½ tsp
    Mace ½ tsp
    Roasted and crushed cumin 1tsp
    Roasted and crushed coriander 1 tsp
    Cloves 8
    Fennel seeds 1 tsp
    Critic acid ¼ tsp
    Method:
    Mix all the ingredients in the grinder and grind it until powder.

    Malpua Rabri Shots
    Khoya Crumble:
    Whole dried milk 100 gm
    Cashew nuts chopped 1 tbsp
    Coconut 2 tbsp
    Granulated sugar 2 tbsp
    Dried rose petals 2 tbsp
    Clarified butter or butter 1 ½ tbsp
    For Malpua:
    Flour 1 cup
    Milk powder ¼ cup
    Coconut powder 2 tbsp
    Cardamom powder ½ tsp
    Crushed fennel seeds 1 tsp
    Baking soda ¼ tsp Powder sugar 1 tbsp
    Warm milk 1 cup
    Clarified butter for cooking
    Sugar syrup as required
    Readymade rabri as required
    Method:
    For khoya crumble mix all the ingredients and bake on 180 for 10 to 12 minutes.
    For malpua mix flour, milk powder, coconut powder, cardamom powder, fennel seeds, sugar and baking soda and add warm milk and make a batter. Not too thin not too thick. Heat clarified butter in a pan and make mal puas. To assemble take a shot glass put rabri in it then malpua then 1 tbsp sugar syrup and lastly with khoya crumble.
