"enjoy" is your only verb in that thought so it needs to come before the verb. I also enjoyed... ;)

Yes, although technically you don't need "and" and "as well" in the same sentence. They are redundant.

Not quite. They're not past forms, they're modals. They are used in many different contexts, but mainly used in hypothetical and conditional statements.

Why do I feel the difference in the sentences: I have eaten it too. - I have eaten it as well. It seems with "too" it sounds "as well as other people" and "as well" in the above sentence sounds to me like "in addition to what I have eaten before".
