Hi Stephen, the number is less important that the time it takes to extract during the brewing process . if you are using an 18 gram throw and it takes say 30 seconds to extract (from the time you press the button) then adjust the grinder more coarse until your extraction time is circa 25 seconds and vice versa. The number on the grinder is a useful guide to understand the relative adjustment being made or if somebody inadvertently adjusts the grinder and you want to quickly put it back to where it was. Each coffee will have a different grind setting so there is no correct or incorrect number. Whats most important is the quality and time of the espresso pour. Hope that helps. David
