I love this! I did the exact same thing. I used Brackeys' video to first learn Godot as well, and made my new channel all about it. I like the health bar addition! Keep it up!
If ur are in beginning start with Godot cause it has very simple tools easy to understand not complex than unity after that you can shift to unity if you want.
when you watch Godot youtube videos pay attention to the version of Godot...I've tried some vids only to have a hard time and then notice the Godot version is older than the one I'm using so...
The first thing I did after making a movement script on my character was add dash, double jump and wall climbing. I just have to transfer the logic from my previous games in unity and rewrite it in gdscript. I succeed though i had a hard time making the wall climbing because I struggled on how "collision/mask and stuffs related to it" work, because unlike unity you can't just give them tags and layer names.
Yeah, that's just one of the many struggles when switching engines... Things seem easy at first but it's difficult to fully understand and be able to utilize the new systems. If you check out some tutorials or read the documentation I'm sure you'll figure everything out in no time! 😄 Good luck with you game!
Well, both sound pretty difficult and time consuming, so you should probably go for the option that you think you are the most likely to see through to the end, especially within a reasonable timeframe. Hope that helps!

You can give the collision layer and masks names from project settings.

It's definitely great news but it's still worth to keep an eye on Godot 😉 knowing multiple engines is always a good thing!

I haven't tried visual programming or Unreal engine at all (yet) so I would have to dive into that before I could do a comparison of anything
