Kepsa or more often called Khapsa in Saudi Arabia is a rice preparation. it is prepared by first boiling whole chicken or lamb or both chicken and lamb in water infused with onions, carrots some other vegetables, some whole dried lemons, cinnamon, cardamom and saffron. once the meats are cooked they are taken out and rice is put into this water which is now infused with the flavors of the meats. once the meats are fished out of the water they are baked to get the crispy crust on them. To garnish they also shallow fry some sliced eggplant, zuccini tomatoes, potatoes ect. Once cooked the rice is poured on to a large platter. the shallow fried vegetables are spread over it as garnish and lastly the baked meats are spread out evenly on the rice. about 5-7 people then huddle around the plate and relish the food. it is typically had with Laban which is basically lassi.

@@amitbrahmo the kepsa recipe I described was how it is made originally in Saudi Arabia. ofcourse it gets a little Indianised since we like things a bit spicy. The most spice they would use in Saudi Arabia over and above the "Aromatic spices " would be some dhania jeera powder which you can find in restaurants. in homes they infuse more vegetable flavors than spices.
@@KhaaneMeinKyaHai ive seen the preparation in Saudi homes where I had lived for a few years. Thats how I know it in such detail. ofcourse in India we have changed the recipe to satisfy our taste buds and even experimented with seafood but the very original recipe usually has chicken or meat. most Saudi's ancestory is being a Bedouin community in a desert landscape. water was scarce so they dont really know much about seafood. being bedouins their only occupation was animal husbandry. Camels, goats, sheeps, chicken ect were animals that were easily reared in deserts so their cuisine too reflects the same.
Its called kabsa here in saudi

4 years ago my office colleagues introduced me to kepsa dish. Since then I love it. When I was residing in worli, I used to enjoy chicken kepsa from Light of Bharat (Kunal Sir your friend Reza's) restaurant.

during my haj & umrah visit to mecca medina i found many KHABSAA outlets in saudi streets. Another dish of Arabs is BROAST which is similar to KFC but served with flavor rice PILAF (like pulav) or khubus (similar to tandoor roti) . Also I loved Falafel Wraps which look like Tacos

Nothing like Mumbai for food, Goans can cook only Fish curry rice, unless some cook has moved to Goa from outside. Mumbai food is fairly priced in such places.

In Istanbul Kepsa is basically of beef minced meat with fresh herbs like parsley chilli salt onion cooked in oven and serve with naan

I was in Saudi Arabia. What I experienced was that when begin the Arabian cusion you won't like it. But when you eat it 3 4 times you'll start liking it such that you want to have it as a must dish in your eating menu.
