Heres The Recipe -
Vodka Sauce & Chicken Cutlet -
Sauce -
2 Tbsp (28g) - Unsalted Butter
1 - Small Brown (Yellow) Onion, Fine Diced
3 - Garlic Cloves, Grated
100g (3.5oz) - Tomato Paste
Pinch Chilli Flakes
2 1/2 Tbsp - Vodka
3/4 Cup (180ml) - Thickened (Heavy) Cream
Parmesan Cheese To Taste
Salt & Pepper To Taste
Chicken Cutlet -
1-2 - Chicken Breast, Butterflied & Halved
3/4 Cup - Plain (All Purpose Flour)
2 - Large Eggs, Beaten
1 1/2 Cups - Panko, Fine or Italian Breadcrumbs
Oil For Frying
Serving -
Butter to Spread
2-4 - Baguettes or Rolls Of Choice
1 - Ball Mozzarella, Sliced into Rounds
Fresh Basil Leaves
Method -
1. In a large pan over medium-high heat, add the unsalted butter and diced onion and sauté for 3 minutes. Add grated garlic and cook for 1 minute. Add tomato paste, pinch of chilli flakes, salt, and pepper. Cook for 2-3 minutes or until the tomato paste starts to brown. Deglaze the pan with vodka and cook for seconds to remove any stuck bits from the pan. Add cream and bring to a simmer. Reduce heat to low and cook for 5-6 minutes or until reduced and thick. Add grated parmesan cheese to taste (optional). Check seasoning and remove from heat.
2. Heat oil to 170.c - 375.f in a large high-rimmed pan or pot. Season the chicken with salt and pepper and dredge it in flour, then dip it in the egg and pat it well in the bread crumbs. Fry the chicken cutlets in the hot oil for 4-5 minutes or until golden and cooked through. A thermometer should read 72.c - 161.f. Do this in batches if you need to.
3. Spoon the vodka sauce onto each fried chicken cutlet. Top with sliced mozzarella rounds and place in the oven on a lined baking tray for 3-4 minutes or until melted to your liking. At the same time, spread the butter onto your baguettes or rolls of choice and toast for 3-4 minutes.
4. Spread some of the vodka sauce onto both top and bottom of the toasted buns. Add the vodka chicken Parmi, any leftover vodka sauce, grated parmesan cheese, basil leaves, and cracked black pepper. Slice and dig in.

I love your channel and I love how you give both metric and imperial measurements and temperatures. I'm in South Australia too so don't need the imperial but great for people who are not in metric. I find that with watching recipes from the US, I haven't come across any channel from there that gives both.

I made this for dinner tonight as well as a eggplant version for my vegetarian wife and oh my God it was so good. I think more chili flakes would be better because it had a very low heat level that I thought was pleasant. Sauce was amazing but didn't seem to make nearly as much as yours did. Maybe I did something wrong and it came out thicker, but it was only enough for a bit less than three sandwiches and not four.

I feel like I can make some variations based of this sandwich:
- Replacing the Chicken with Cat fish or Beef Strip/cuts
- Or adding something else instead of vodka to the sauce

If Neal prepping this what would be the best way to store and re heat? Assuming wrapping them and reheating in an oven grill?
It can be prepped ahead. I don't recommend frying if you're going to store it. Pan-sear the chicken instead. As for reheating, do so in a pan or sandwich press.
Nice, I've made Chicken Parm before but in an Air Fryer, never with vodka sauce though which sounds like an interesting variation.

Love your recipes, especially your meal preps. In US, fresh Mozz comes pretty wet. Do you have recommendations for getting it a bit more dry as it looks in your video, or is that how it comes packaged for you?

I make this very recipe, but I don't feel good about deep frying, so I air fry the chicken. I give it a light spray with oil to help crisp it up, cook for 7 minutes, turn it over, another light spray, and cook for another 3 minutes. Crispy, yet tender and juicy. So yes, you can absolutely do this in the air fryer.
Not a good idea to watch this at 11 at night. Im drooling... 😂

How does the garlic not burn beyond 1 minute if your adding more ingredients? Is it just because theyre combined where as with only a few it can burn?
The more ingredients in the pan will prevent the garlic from burning whereas the least amount will give it more surface area to solely burn.

i do!, its parma and always has been, you can check google trends yourself (sort by Australia, you can even sort by state and go back as far as 2004), this un-australian nonsense needs be nipped in the bud. it is parma, parmi, is simply people misspelling it, letting that be a norm will lead to idiocracy.

Does anyone know how this sandwich got its name? I was fully expecting Parmesan cheese to be used in this recipe because of the name... I can't think of anything else where this name Parm would come from 😂 Then again, English is not my native language so I'm probably missing something obvious
Parmesan was and is an ingredient to add but doesn’t do much to this particular recipe so I didn’t add it this time. It can be added with the mozzarella cheese or even grated over at the end.
