Doom Slayer would still win. He's not even mortal dude, he can rip titans apart and has fought for millennials. Which is like thousands of years, he became practically immortal from the divinity machine which granted him increased strength and not any urges for human needs such as eating or sleeping. He can pretty much only be harmed by demon/heaven energy which is Argent Energy. And even without his armor, he has fought The Titan. The biggest titan hell could've conjured up had been sent to defeat the Doom Slayer, and Doom Slayer beat it with just a sword and shield before he had obtained his Praetor suit. In all honesty, I think this matchup would be the most unfair fight ever because of Doom Slayer's strength and experience. And how he was also taught by not only the military when he was Doom Guy but also the Night Sentinels, a military full of warriors in an alternate dimension. Goblin Slayer mostly relies on weapons or whatever is near him. Hand to hand is pretty much his last resort. And although I think he is experienced in fighting goblins and ogres and hobgoblins. They don't really hold a candle to the heavies in Doom such as the Baron of Hell, Hell Knight, Dread Knight, and Tyrant. Also, I understand that Goblin Slayer's dedication and resilience are very strong, but no matter what Doom Slayer would be the one hitting harder and not taking a lot of damage. Even with weapons and armor nothing in Goblin Slayer's arsenal can harm him. Magic can't manipulate Doom Slayer since he is incorruptible and arrows and swords won't pierce his armor.
The DG/GS comparison is kinda weird, they're barely anything alike. Goblin slayer is not hugely strong, uses crappy weapons and has generally basic equipment, uses his cunning to win fights and his reputation is that he's a weirdo and some even call him cowardly for only fighting goblins. In contrast, Doomguy has demigod strength, an arsenal of custom weapons, relies on brute force to fight and has a reputation as a total badass who inspires awe in people. All they have in common is that they're angry but have a soft spot.
