Watched a video where they made a cardboard circle of the size of the pie and made the weave on it. Then put it in the refrigerator until chilled and firm. This they slid on top of the pie. Much easier. One of the best cobblers I ever had was at the Big Bend State Park in Texas. They had several Hispanic cowboys that doubled as cooks,boy did they rustle a great supper! They used canned peaches and sour cherries with pecan halves for the cobbler filling. It was heavenly! Worth trying next time you want a new filling when you make a cobbler. Believe me people will want a repeat performance!
I learned to cook in dutch ovens when my son was in Boy Scout back in the mid 80s. Sometime the troop had acquired a ton of Dutch ovens and griddles. One of the asst.scout leaders was a30+ yr Scout,an Eagle Scout. Head guided all the leaders into Dutch oven cooking. We did a lot of camping and canoe trips. The leaders would eat together,from CI and the boys brought their food and cooked for themselves. Early on they ate crap! After a few trips,smelling and seeing the leaders food,a slow movement to CI started with the scouts asking for help. From the beginning after supper the leaders would make cobblers for every one. Dump cakes actually. I think cobblers were what drew the scouts to CI. The breakfasts with eggs,bacon,sausage ,hash browns,biscuits and gravy,and pancakes didn’t hurt either! Subtle way to teach the scouts. By the time I left troop, PCs to Korea, the scouts were getting pretty darn good with CI cooking. Loved those days! I must have a half ton of CI!
Hi Mr B. That is a gorgeous dessert you made and looks positively yummy. Thank you for making it and showing us how it is cooked in a dutch oven. I have type 2 Diabetes and this recipe is perfect as it is low sugar. I would sprinkle Truvia on top of the dish instead of regular sugar as I am permitted to eat Truvia. (Stevia)
I don't have diabetes yet and I don't want to increase my chances since it runs in my family on my mother and father's side. I have never enjoyed things that are overly sweet. I like to taste the fruit more than sugar. This was a perfect balance for me, but you could leave the sugar out completely but keep the salt which will make the fruits taste sweeter than they really are.
I did rub the entire surface with butter prior to the pie crust going in. I forgot to mention that. If your DO is seasoned well, it's probably not needed but I don't take the chance. Thanks for watching.

I hate to burst your bubble but what you made was a peach pie not a cobbler but I like peach pie just as well. A cobbler has a crumbled top with oats and brown sugar & cinnamon in it.
