Red Onions Stuffed with Rice

This is a deliciously versatile dish that's great any time of year. You can make these with any type of onion-red, yellow, or sweet. Just choose ones that are about the size of tennis balls. They are good served hot or at room temperature, and make a welcome addition to a buffet table. They also look fabulous served as a side dish at a formal dinner if you are going to plate the main course with proteins and side dishes on individual dinner plates. YUM this could be a side dish to a meal or if you want something to just eat this would be a very good meal by itself. Get some crusty bread and this would be a great combination.
