Cakesicles... The Dip Method | Chocolate Dipped Treats

- Here is a great tutorial on how to make cakesicles without worrying about the chocolate cracking when releasing it from the mold. If you would like to follow along here is what I used.
Warm Yellow Cake
4 Cavity Mini Cakesicle Mold
4 Popsicle Sticks
Merckens White Chocolate melted in 30 sec intervals
Color Mill Baby Pink and Nude
Bakell Krazy Sprinkles in Yellow
Butterfly Mold
1) Let your cake cool down for 10-15 mins or place your already cool cake in the microwave for 45 secs.
2) Knead and mash your cake til it is like dough.
3) Place some cake dough in the cakesicle mold. But leave room for your stick, chocolate, and more cake to fit.
4) THIS IS IMPORTANT!!! Put some chocolate in the area towards the bottom.
5) Put stick through the slit.
6) Place more cake dough over the stick.
7) Repeat steps 3-6 as needed.
8) Put molds in the freezer for 10 mins
9) Melt Chocolate in intervals of 30,20,10 secs and stirring between each interval. Melt til chocolate is 80% melted then stir the chunks away. (the heat from the chocolate will melt down the rest of the chocolate).
10) Add your desired colors to your chocolate.

11) Let the chocolate cool down while the cakesicles finish up in the freezer.
12) Pull the side of the mold to help release the cakesicle and push the cakesicle up with the stick.
13) To avoid a lot of chocolate getting on the stick dip at an angel. Rotate the cakesicle to get tha back.
14) Shake off excess chocolate and place on silicone mat, wax paper, or parchment paper to set.
15) Decorate and enjoy.
Remember with the warm/hot cake taking it out after 10 mins the cakesicles are not frozen or super cold. Also my chocolate it not super hot. Always let your chocolate cool down for 3-5 mins to avoid your chocolate cracking or blooming. If you forget about your cakesicles or the cake is not warm be sure to let your cakesicles sit for 5-10 mins before dipping
Thank you very much! I need to use this method for a cake design with cackecicles on top! I needed a way to stick a stick in the top while the chocolate is still wet so that I don’t crack the chocolate in order to reinforce it in the cake. I can’t do that with the mold! Greatly appreciate you 🙌🏾🫶🏾

Thank you. I use Merckens and a small amount of Paramount crystals to help get it smooth.

10 mins with the mini ones. This way they are solid but not frozen. 😊
Do you let them sit after taking out of freezer or dip immediately? Sorry if this has been asked before.
Hello... because I don't freeze them too long and the cake was warm when I started I dip out the freezer. If you premake your cake pop mix and freeze solid you definitely should allow them to reach room temperature to avoid blooming and cracking.
are you leaving out the oil when you bake them , are you altering the cake recipe at all ?
Great question. I do leave out the oil and sub milk for water.
You don’t stick the popsicle stick more in? I’m scared mine will fall off. I tried to freeze mine until solid and when i let them get to room temperature they fell apart 🥺
Sealing them with the chocolate helps set them and they wont slide off. Ive only lost 1 cakesicle this way and that was cause I was rushing. Try to follow all the steps and let me know how it works for you.

You definitely have tonpay with it. And make sure your cake is moist. Either use fresh out the overn or cover immediately to lock in the moisture
